Hi folks! This is yet another WAYYYYY overdue post. Yes. Overdue because I was in Spain in MARCH and its already AUGUST!!! Spain was an exciting one as we travelled from Barcelona to Valencia to Alicante to Gaudix to Granada to Cordoba to Seville to Lisbon & Sintra (That’s not Spain its Portugal!) to Madrid to Toledo.
Loved it all and my favourites were walking through Granada and hearing the stories of each place from our local guides. Food was nevertheless fantastic of course.

If there is ever a recurring theme in the photos I take, it will probably have to be street alleys and buildings. Olympus OM-D EM-5 (This was taken right before I smashed the camera in the Swiss Alps)
Seafood Paella Recipe Serves 6. Stock 1) Tiger or Large prawns approximately 600-800g. I used 6 in this recipe. 2) Mussels about 1kg. 3) 6 Large clams or if you are using smaller clams, use approximately 500g. 4) Saffron ( a few strands) 5) About 7 cups of water ( 3 cups of rice. so if you are using 2 cups of rice, then its 5 cups of water. so the math is X cup of rice = 2X + 1 cup of water For the Paella 1) Olive Oil 2) 2-3 Onions chopped 3) 1 whole bulb of garlic chopped 4) 3 cups of Bomba rice. (3 cups serves approximately 6 people) See Math formula above. 5) 200g Calamari Rings 6) The remaining 6-8 pieces of Tiger prawns from the stock above/9) Bag of Peas 7) 1 Red Bell Pepper 8) 1 Green Bell Pepper 9) lemon wedges for garnishing 10) Smoked red peppers for garnishing Directions - First make the Stock:Combine all the stock ingredients in a pot. Boil for about 1/2 hour or until shrimps are falling off and saffron is giving off a rich yellow color. Be careful not to overboil until your stock is lesser than the amount you need. Set aside until you are cooking the paellalater. -Paella 1) First heat up your Paella pan 2) Add lots of olive oil, the more the merrier :D 3) Throw in the garlic, onions, bell peppers and let in sautee for about 15mins. you want to caramalize the onions 4) Now put the chicken pieces and fry till it is almost cooked 5) Next add in the cups of rice and stir fry it dry slightly 6) Then add the stock you made earlier. keep stirring until your rice is cooked 7) Throw in Peas, Mussels, Prawns and calamari towards the end. Make sure that the seafood is not overcooked. 8) Arrange nicely and add the lemon wedges and TADA- PAELLA!!!

If you have been following me on Instagram, I have been (quite religiously) updating the feed with my travel photos from Europe and recently, Sydney. I was utterly hard-broken when my Olympus OMD EM-5 broke into pieces when I fell on ice in Switzerland (Blame it on the shoes!). Nevertheless, I still managed to take some awesome pics with the iPhone 6 and did the usual bout of editing with VSCOCAM and the newer Instagram filters. So, until I find the time to sit down and look through all my photos, edit and upload them, let me leave you with a couple of my favourite pics (from Italy) from my Instagram feed. Beijing taken on an iphone. Here’s wishing everyone a Happy Lunar New Year! And to celebrate, I have posted some pictures from my trip to Beijing in September last year. I have to be honest. I am not one who embraces my Chinese roots well. I spent a good amount of time in school dissing my Chinese teachers and also making sure that I could proudly stand up as someone who doesn’t like to speak Chinese. So for me to actually write a post about the Forbidden City, believe you me, I am taking a lot of effort doing this. It was my second time in Beijing after visiting the city for the first time about 10 years ago. I was young then, just coming out of college. I was there for a business trip and never really got to savour the touristy sites. Even with this second business trip after 10 years, I still haven’t had the opportunity to visit the Great wall, but was thankful that I could spend a free half a day (I know, pathetic) at the Forbidden City.I must admit that Beijing has certainly changed a lot after 10 years in a positive way (pardon my ignorance). It is not exactly Singapore or Hong Kong, but I must say that the government has really made the effort to advance the country in all ways admist the political scandals and ridiculous-ness of tainted baby milk powder. But then again, ridiculous-ness can be found everywhere, as long as there are ignorant humans around. =)I was lucky that the hotel was about 15 mins away from the Forbidden City/Tiananmen Square. I decided to start early because I didn’t have much time and wanted to fight the massive crowds. I won’t go on now about how exactly I got in as I rather leave the experience to the person who will be visiting the city. Weather: foggy
