Steb and Maddie Friendship Headcanons:
They met while Maddie was still in the academy, and Steb was a freshly graduated rookie stuck on traffic duty. Someone's car broke down in the street, and as he approached the scene, he found Maddie already elbow-deep under the popped hood, feeling around the parts. He had no clue what she was talking about as she explained the issue to the driver, he was simply content to let her handle it as he redirected traffic around them.
Despite being just two years younger than him, Maddie looks up to Steb a lot. She's always impressed by his extensive knowledge on language (I see him as a polyglot, fluent in 6 languages), history, and marine biology. Before joining Caitlyn's team together, she was the only person in the department to make him feel like he belonged, and although he's still quiet while their alone, he's touched that she values his opinions so much.
Her respect for him doesn't stop her from calling him an old man when he cracks his back or acts confused about some new fad.
The first time he truly felt protective over Maddie was when he witnessed a drop in her blood sugar after arresting a wanted criminal. He stayed by her side, with the suspect handcuffed to the handrail of somebody's porch, until she stopped shaking and could stand by herself. It wasn’t until days later, when he spotted her vial of insulin, that he pieced together what happened to her, and while he never confronted Maddie about it, he started carrying around extra snacks on patrol to prevent seeing her like that again.

I think after Steb saw maddie fix that car, he'd ask her to fix things sround the area to further her abilities and not make her forget this talent.
Also I think that they have a relationship close to how a 2nd semester student adopts a 1st semester student. Not exactly a mentor-student thing but more of a 'I've done this before and can tell you this is a horrible idea' type. Saved Maddie from getting into trouble a time or two. I can also imagine maddie took the fall for steb when she was a newbie grouped with steb, because she knew there'd be lighter consequences.
At some point someone probably also started a rumor that they were dating (because God forbid a boy and a girl are friends) but that one disappeared before it could spread far for reasons unknown but possibly linked to violent actions. Now whenever a freshling claims to have thought the two were a couple, the more seasoned officers shut them up in a panic like an urban legend would be summoned upon those spoken words.
Also (unrelated to her relationship with steb) I think that maddie had to take steps in adjusting her own uniform to fit her because the smallest size still sat on her like a bag and there was no way she'd go out on the field not looking snatched. (Coming from someone who's seasoned in altering clothes to look more flattering 😼 I love projecting on her)

Number one she uses those mechanics skills to help fix stuff up in Zaun. Probably not part of her job, at least in the eay she does it, but what is she supposed to do when some zaunite kid waddles up to her, broken toy thing in hand. Not her usual area of expertise, hyt she's never going to leave a little one hanging! From there it just spirals and they give her a whimsical title.
AND I think when she was first moved to her grandparents in piltover was when she first developed a hand in fixing things. She used to tinker with stuff back in noxus too, but probably ended up having to make a living from it when she was moved to piltover, so she could support her grandparents. When she was younger it was just little jobs like helping someone fix a hole in their bike tire for a few bucks.
I don't think her grandparents forced her to do it though, she just went on afternoon walks and came back home with dirt smudged across her face, a bit of money in her pocket and a proud grin as she presented it to her grandparents. They made sure to buy her something special from the extra money, even if it was just a scoop of ice cream.
