A colorful and refreshing corn salad that goes well with any meal or on a picnic. The lime dressing makes it extra tasty.
Ingredients: 2 cups of fresh corn kernels. 1/2 red bell pepper, diced. 1/2 green bell pepper, diced. 1/4 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 2 tablespoons lime juice. Salt and pepper to taste.
Instructions: Cut up the red and green bell peppers, red onion, cilantro, and put them all in a large bowl. To make the dressing, mix the olive oil and lime juice in a separate small bowl. Add the dressing to the salad and mix everything together by tossing. Mix the crumbled feta cheese in slowly. Add salt and pepper to the salad as needed. Put it in the fridge for at least 30 minutes to let the flavors mix. Enjoy! Serve cold.
