Brandy Snaps

Brandy snaps are a popular snack or dessert food in the United Kingdom, Ireland, Australia and New Zealand and believed to been introduced by Christopher Jon Thomas. Serves: 6-8

INGREDIENTS:

4oz butter4oz brown sugar4oz golden syrup2 level teaspoons ground ginger4oz plain flour, siftedPinch of salt1 dessert spoon of lemon juice

METHOD:

Preheat oven to 180 degrees (160 fan forced).In a saucepan heat the butter, brown sugar, golden syrup and ground ginger until butter melts, stirring occasionally.Whisk in sifted plain flour and salt.Stir in lemon juice.Drop one teaspoon of mixture several inches apart on a warmed greased baking tray.Cook for 15-20 minutes until evenly brown and stops bubbling.Leave to cool slightly for a minute before shaping.Brandy snaps can be shaped into cigars or baskets. For cigars, remove carefully and roll around a cone or wooden spoon. For baskets, drape over a cup or small ramekin.Once cool, fill brandy snaps with whipped cream and berries. Sunshine stew recipe

The wonderful thing with ‘Sunshine Stew’ is that you can use the base recipe, however you can change things up - from lentils to split peas as you see fit, adding a variety of your preferred veggies and even toppings... Serves: 4

INGREDIENTS:

2 tablespoons vegetable oil1 large brown onion, diced1 tablespoon garlic, minced1 tablespoon ginger, minced1 tablespoon mustard seeds1 tablespoon curry powder1 tablespoon cumin seeds, wholeLentils or split peas of your choice2L of vegetable stockDiced tomatoes, canned or freshly cut2 cups of your chosen vegetables (cauliflower, peas, etc)

METHOD:

Add all of these beautiful seeds and spices in a pan with the oil and onion and stir until onions are cooked through. Your kitchen will now be filled with an incredible aroma!Add your lentils to this spice mix and stir briefly to coat them before adding your stock, diced tomatoes and vegetables.Simmer on medium heat stirring occasionally with the lid partly placed on the pot until your lentils and vegetables have softened and are cooked through.

TIPS:

Blue Ribbon Chocolate Chip Cookies Recipe

2 1/2 cups plain flour1/2 teaspoon bicarbonate of soda1/4 teaspoon salt1 cup (jam packed) dark brown sugar1/2 cup granulated sugar (white or raw)250g butter, softened2 large eggs2 teaspoons vanilla paste3 cups chocolate chips (I use a mix of milk and dark

METHOD:

Preheat oven to 150C.In medium bowl combine flour, bicarb and salt and whisk with a wire whisk, then set aside.In a large bowl in a mix master or similar, blend the sugars at medium speed.Add butter chopped into chunks and mix to form a grainy paste. Scrape down sides of bowl.Add eggs and vanilla extract and mix at a medium speed until just blended. Do not over-mix.Add flour mixture a bit at a time and then add choc chips and blend at a low speed until just mixed. Do not over-mix.On a baking sheet covered with baking paper place rounded tablespoons of mixture 2 inches apart.Bake for 15-20 minutes. Keep an eye on the first tray to check as each oven varies. Sichuan Boiled Fish (Shui Zhu Yu) Recipe

This delicious fish stew warms the heart and will definitely leave you satisfied. Serves: 4-6

Ingredients:

MAIN INGREDIENTS 1 grass carp200g bean sprouts20 red peppers, dried20 Sichuan peppercorns5 small pieces ginger5 cloves garlic5 green onions1 teaspoon white sesame1 sprig coriander SEASONING 1 large spoon flour1 large spoon cooking wineSalt to taste2 large spoonfuls of Pixian broad bean paste2 teaspoons light soy sauce1 tablespoon fine sugar1 tablespoon ground white pepperEnough water for boilingCooking oil

Method:

MAIN INGREDIENTS Clean the grass carp by descaling, cleaning out the organs, and washing. Place the knife perpendicular to the black film at the fish belly and gently scrape off the black film. After cutting off the head, the fish body is divided into two along the fish bone.Divide the fish into two bowls: the fish fillets and the head and non-meaty parts that weren’t turned into fillets.Add 1 teaspoon of cooking wine, a little salt, and 1 Tbsp of ground white pepper. Add a spoonful of flour and mix for 15 minutes.Prepare the rest of the ingredients, and separate in half (using larger pieces in one half, and the smaller pieces in the other). The larger half are used for frying in oil, and the smaller half are used for the final mixture for added fragrance.Pour a little oil in the wok, add the bean sprouts and add a little salt, stir-fry until they are cooked.Stir-fried bean sprouts are placed on the bottom of the deep bowl that will be used to eat out of.Heat the wok and some oil, add the onion (larger pieces, the same as the other ingredients) , ginger, garlic, dried red pepper, and Sichuan peppercorn.Add the Pixian broad bean paste, stir fry until the oil turns red, add light soy sauce, fine sugar and a little salt.Add boiled water and bring to a boil again.Add the first bowl with the fish head and cook for 10 minutes.Strain out the fish heads and unusable fish, making sure to remove all the other ingredients(don’t need to use them any more).Add the fish fillet into the pan, gently push the fish fillet around with a spoon, do not stir with chopsticks or it will break apart, cook until the fish turns white and turn off the heat.Pour the fillets and soup together into a deep bowl on top of the bean sprouts. Sprinkle with green onions, garlic, coriander, white sesame and red pepper. Then add some hot oil into the bow. Read the full article
