Thai salad dressing recipe

INGREDIENTS: 2 coriander roots, scraped 2 pinches of salt 5 garlic cloves, peeled 6 bird’s eye chilies (scuds/Birdseye) 3 tablespoons white sugar 9 tablespoons lime juice 2 tablespoons palm sugar 4 tablespoons fish sauce PREPARATION METHOD: Traditionally you start with the salt, coriander, garlic and chilli - smash them to a pulp in a pestle and mortar, Then add the rest of the ingredients one by one.This dressing goes on everything, it can even make shredded cabbage into a full meal.We can make it at home and mix it through pork mince , serve it on white or brown rice with cucumber and iceberg lettuce, coriander leaves, basil.Some people often leave the chili out dress the whole salad and then add chili to ours at the table that way the children don't get too much chili and everyone’s happy. Skrrrrrt skrrrrrt! Good Day Cafe in Orakei goes exotic. Chef Brad has just come back from a food trip to Bangkok so this morning we are greeted by this Exotic Salad which was certainly non-white people food. Uncle had to analyse this delightfully colourful creation: vermicelli, pickled cucumber, pickled radish, carrot, red cabbage, capsicum, toasted cashews, coriander, mint, lovingly drizzled with an exquisite Thai dressing. What's there not to love?
