Sun-dried tomatoes are one of my new-found favourites. They have such a strong flavour incomparable to regular fresh ones. And so some of them made it into this vibrant dish of penne, tomatoes and sausages. 

Boil penne. Drain. Slice sausages. Fry. Add tomatoes. Stir. Add penne. Mix. Season with a sprinkling of herbs and salt. Remove from heat and serve warm. Enjoy.
