Actually, I just rewatched the scene and her mouth was already open when he turned around, which means it was already open like that while she was watching him mount the horse, and then when he turned around, and she was caught like that, she readily shut it close and smiled at him.
I don’t think she expected Jon to turn around to wave and look at her one last time, because they for sure said goodbye in private, before he headed down for the crypts, so yeah, he totally caught her under guard there.
Thing is, Sansa knows that there is a chance he might die South, that the odds aren’t in his favor, because very few Starks come back alive, that everytime a Stark goes South it brings disaster and death (Brandon, Rickard, Lyanna, Ned, Cat and Robb), even Tyrion tells him this, but Jon says he’s not a Stark, which isn’t true, he’s not even a bastard, he’s half Targ AND half Stark. So yeah, Jon didn’t die South, but he sure as hell caused a disaster by going; you know, the NK acquiring just what he needed, an Ice Dragon, to bring down the Wall and all that.
So Sansa, literally looked at him, she followed him with her gaze, after he came out of the crypts and while he was heading towards his horse, as if it were the last time.
(Side note, I just noticed this, but Davos’ horse legit looks like he’s bowing to Jon 😆)
Same thing goes for Jon, the very reason why he turned to look at her one last time is because he loves her and because he knows chances are pretty high he might die, and he’s afraid he might never get a chance to see her again. I think by now it;s common knowledge, but Sansa has become and is his weakness.
Let’s remember for a moment that Jon thinks there is no afterlife, so he thinks that after you die, you never get to see the people that you love ever again. He thinks that if he dies, he’ll NEVER SEE SANSA AGAIN. So what he wanted here, by turning around, was to have the memory of the last time he saw her, the memory of HER, clear, in his mind.
So again, Jon thinks that you don’t see the people you love in the afterlife, cause he thinks there is no afterlife, just darkness and nothingness. Now, let that sink in for a moment, and then think about him not turning to look at Dandelion, the presumed “love of his life”. That scene LITERALLY spells it out to the audience that Jon couldn’t give fewer f*ks about her lol
Jon and Sansa’s goodbye scene was everything. It was so sweet, emotional, tender and heart wrenching. It was beautiful. Subtle but full of meaning.
And think of this, say Jon had died down South, Sansa’s last memory of Jon would have been Jon being surrounded by snow, of him taking the time to turn around to look at her one last time, wave at her and lastly sweetly smile at her with a clear expression on his face that he doesn’t want to leave her but has to, because it’s his duty to protect the North, it’s his duty to protect HER, he promised her he would keep her safe, and he is only leaving her, because he thinks it’s the only way to keep his promise.
And Jon’s last memory of Sansa would have been her sweetly smiling and waving back at him with an expression on her face that clearly shows that she doesn’t want him to leave and leave her, all the while she’s surrounded by snowflakes, which are falling around her, and she looks well, breathtakingly beautiful, as always.
While we’re at it, I’d also like to point out that, the number of shots of Sansa looking sad and after Jon, after he leaves are ridiculous.
Ok so the first shot is in the gif above (the one where she raises her hand to wave goodbye). You can literally see the moment when Jon turns around and her smile fades away and is replaced by such a sad look. Just look at the gif and pay attention to when she starts lowering her hand, it’s heartbreaking.
The second and third shots are in the gif below.
In the frontal shot you could swear that she’s fighting back the urge to cry, because she’s blinking very fast and looks so distraught (I want to hold her omg). And in the side shot she is still looking after Jon, processing the fact that that’s it, he’s gone, and Gods know when and if she’s going to see him again.
Before we get to the 4th and last shot of Sansa, I’d also like to add this:

And below we have the 4th and last shot of Sansa STILL looking after Jon, after Little Finger has had his Jonsa epiphany. The way I see it, he’s been gone for two seconds and she misses him terribly already.
So here we are, there are four different shots of her sadly and longingly looking in Jon’s direction, FOUR. Four shots where the direction of her gaze doesn’t change, four shots where she doesn’t move a millimeter from the spot she was standing on when he left. Why would we need four shots of Sansa doing this to show us just how sad Sansa is about Jon leaving?

Four different shots to show a sister is sad her big bro is leaving? Four of those shots after her so called “bro” almost choked a man (who said he was in love with his so called “sis”) to death? I don’t bloody think so. They overdid it for a reason.
If their relationship was a platonic one, ONE shot of her would’ve been more than enough, it would’ve gotten across the message that Sansa will miss him and is sad he left, but since their relationship isn’t platonic, since they both have romantic feelings for one another, here we are.
