Low-FODMAP Vegan Meal Prep: Cauliflower Gnocchi with Sauteed Peppers
I'm eating low FODMAP at the behest of my doctor, so I cant eat vegan for every meal. But I've been doing VB6 -- eating vegan for two meals a day -- to hold on to healthy eating during lockdown.
This week is cauliflower gnocchi from @buzzfeedtasty and seasoned sauteed bell peppers (I adapted a recipe from Martha Stewart to be low FODMAP with garlic-infused olive oil and low-FODMAP seasoning instead of onions). I cant believe I've made it to four weeks doing this.
I have no idea what I'll do for next week, lol.
