Scouring my past WIPs, I’d say that most of my disabled characters are intellectually impaired in some way. I find that interesting to write and think about, especially when it comes to what their lives would be like in a fantasy world and how others would treat them.
The protagonist’s mother in my current WIP is actually physically disabled, though. I haven’t figured out the specifics of it, but she was born that way.
It was actually the solution to a plot problem: The protagonist needs to be expected to follow in her grandmother’s footsteps at a young age, and take over her responsibilities when she passes, but why wouldn’t that fall to her mother, instead? Answer: Her mother can’t.
Most of her aid comes in the form of townspeople helping out and coming over to her house to do things she might need assistance with. It’s a tight-knit little village, so she doesn’t really need anything more than that. She doesn’t really leave the house often, though. That’s partially the disability and partially just the kind of person she is. Her mother (MC’s grandmother) is kind of a big deal, so they’ve got a pretty nice house for a small village.
Other than that, I once had a big, overarching WIP spanning multiple books and containing a gazillion characters but ultimately not making much sense (Happens to the best of us). One of the protagonists of that actually had one of the chronic illnesses I have (No research needed!).
If I ever actually wrote that story, though, I’m not sure if I would keep that in. It’s difficult to stay distant from that, and when you can’t separate a subject from your own experiences with it, your writing can become more of a vent than a story, and characters can stop being characters and start turning into vehicles for that vent.
His illness wasn’t even all that relevant, and he ended up getting the organ than caused it removed from his body in the first book (Or he would have, if I had written it), so it wasn’t like it had much of a presence.
There are other characters as well, but some I would prefer to keep private for now and others aren’t developed enough for me to talk about them coherently. Also, I can barely remember any of my old WIPs right now! It’s hot outside and my thinking suffers when that happens

Permanent injuries are a constant in my writing, it's a pet peeve of mine when a character just walks off an injury like it's nothing (in-universe healing powers notwithstanding). So I have many characters who sustain wounds that stay with them for the rest of their story and into the post-canon as well.
I have a character who breaks his leg pre-story, and he is unable to allow it to heal properly and thus must walk with a cane as a mobility aid.
I have another character who develops anemia in his late teens due to a curse, and he has chronic pain alongside it. He is able to seek out the aid of a magical healer to alleviate some of the pain, but it is only a temporary solution.
I have another character who has minor nerve damage from her magic and sometimes has tremors in her hands.
I know I have more but that's who I can think of right now.

I think I answered something similar last year, but here goes! :D
So, the biggest disability I have, honestly, is that I need glasses. But that doesn't mean too much for writing. I did in the past have a more prevalent chronic pain issue, but it's mostly resolved now. I am still tired all the time though.
Now, I have actively made sure I have a fair few disabled characters in my stories. It isn't common in my stories (i.e. it isn't a major theme of most stories), but it's in most of my stories, at least in one or more important characters.
Some examples include:
Wels (Frequency) is completely blind since birth, as well as being notable frail and implied to have chronic pain/illness(es), though it isn't stated what in story.
Kasi (Frequency) has a notable amount of vampiric traits which are used more broadly as a metaphor for disability than being a direct portrayal of one. Her entire story is about dealing with this side of her and finding the support she needs.
Tinder (Wild & Grief) is the protagonist of Wild & Grief, whose entire story revolves around community and disability. Tinder himself is unable to speak, has permanently injured legs, and a few other smaller issues.
There are more, of course, but these are some of the most notable. For all of them, aids are either not available or or marginally help. Furthermore, most of my disabled characters try not to let it define them, but a fair handful (including Kasi and Tinder) learn to live with it and forge it into a cornerstone of their identities.

I include disabilities in my stories because, just by the very degenerative nature of life, everyone's going to end up disabled in some way or another. I want to reflect that in my writing, that it's just a part of being alive, not some great moral failing or whatever.
In Shackle and Noose, I've got two characters with prostheses - Malakh's right leg, and Pryseia's left arm and eye. They led dangerous lives on the front lines of wars they wanted no part of, and they did not come out of that unscathed. But again, these artificial limbs are just a part of their lives now, and I am not pulling the kind of nonsense where they're going to magically regrow their missing parts by the end of the story!

I'm disabled myself, so the answer is... it shapes everything I write, it shapes the way I write, it shapes who I am in a major way.
In terms of the specifics- my book, What Was Borrowed, contains a disabled character named Georgie. They're the sibling of the principal protagonist, Kit, and physically disabled. They often use a wheelchair, but also have a cane; they also suffer from chronic fatigue, so can't always use the cane. As a result of their disability, diagnosed in childhood, they've evolved into more of a 'guy in the chair' type to augment their brother's rampant and chaotic style of vampire-hunting.
(Oh yes. They're vampire hunters, by the by)
Their condition is degenerative and they're very aware of this fact: they have some frank conversations about the matter with Kit, it's touched on in the book. I don't want to harp on it, because there's a lot more to Georgie than the end of their road and the slow slide they're taking to get there, but it's also impossible to ignore. They're a practical person. They love Kit.
They're also not a burden on him. They trained to kill, just the same as he did, and between them they each cover the other's weaknesses.

As I have AuDHD, I would probably say that some of how I think and view the world bleeds through into my writing a lot. However I do challenge myself to write beyond my experience so that I may learn more about others and their lives.

Sadly, I do not write disabled characters often. The only two are Jaye and Yrja.
First: Jaye. Yes, she has a disability! Jaye is colour blind, and has difficulty seeing red - protanomaly. Anything red appears almost golden to her, while pinks tend to look purple. While it annoyed Jaye as a child, she has since gotten used to the unique way she sees the world.
I have personally known two people irl with colour blindness - one person with mild achromatopsia and another with tritanomaly.
Second: Yrja the Salamandia (From Book Four of The Starsinger Chronicles) - she is an amputee!
From her intro:
She lost part of her left arm years ago to a rabid firefox, the creature burning and clawing her arm to the point it had to be amputated in order to save her life. Some may see her as disadvantaged. However, to Yrja, who has three other hands and rather flexible toes, she is no less able than any other. There is not much that she cannot manage with creative balancing and thinking outside the box. Her people have a saying. Take my arms, but leave me my tail, for I can still kill with it.
Yrja also has the distinction of being the ONLY character I have intentionally written as straight.

Kit and Alex immediately commence trying to find one another in the fog. Kit isn't worried about Alex; his young apprentice ought to be able to take care of himself in a mildly spooky wood. Alex is worried about Kit. Both know they're unequivocally stronger together.
Neither are all that scared. Kit wants to get to the bottom of this, though. They're here now, why not? And he's secretly a little frightened of the fae.
Common-or-garden monsters, though, they can handle. Kit's been lost before. They'll find their way out.

Lady Fae would probably be there on purpose, researching legends or kinds of magic, looking for portals or just curious about the spooky wood. And she's not scared of very much because she can teleport. Unless the spooky wood is in The Valley Kingdom where teleportation isn't reliable. Then she'd be shit scared and clinging onto Frederick because he has a sword. Frederick would be more nervous about Fae accidentally starting a forest fire than any creature that might come out of the fog. {Read here}
If Marianna is fully armed, wearing her body armour and has a potion to help her see in low light then she'd probably be wary but fine. If she isn't fully armed, armoured and potion-ready then she'd be running in whatever direction she thinks she came from, or hopefully to a river that vampires can't follow her into. She might be a walking battering ram but a group of vampires could still have the upper hand if she's not prepared. {Read here}

Lissandra stepped through the long wet grass of the woods. Fog hung in the air, like a translucent curtain, making it difficult to see the dark trees that loomed over her, making her feel very small. She shivered as the slimy strands of grass clung to her with every step as if trying to grab a hold of her.
Suddenly there was deep growl of laughter, causing her to spin around trying to identify the source of it. The silence of the wood settled back in, so much so that Lissandra swore that her heartbeat was echoing through the fog.
Then the laugh came again. She whirled around again and this time she saw a faded smear of red sliding through the swirling fingers of fog. Panic gripped Lissandra's heart and she began to run through the woods. Laughter echoed all around her as she crashed through the long grass, getting louder and louder, bearing down on her.
Against every instinct screaming within her, Lissandra looked over her shoulder. Her breath caught in her throat, as she saw a pair of glowing yellow eyes glaring after her, violence a promise in their glare.
Distracted by the eyes, she didn't notice the tree until her shoulder slammed into it, sending her ears over foot, until she came to rest in a tangle of sodden grass. She tried to get to her feet but the icy blades held fast as the eyes got closer and closer and the laughter got louder and louder, until the only thing Lissandra could do was scream as tears flowed freely down her face.
"Lissandra!"
A familiar voice called to her and it was almost as though it was right next to her.
"Lissandra! Wake up!"
"WAKE UP!"
With a loud gasp Lissandra sat bolt upright, breathing heavily and shaking like a leaf in the wind. She started as a hand touched her shoulder and she whipped her head round so fast her neck cricked. Sat next to her, concern written all over her face, was Eve.
"You were screaming in your sleep. Another nightmare?"
Still breathing heavily, all Lissandra could do was gulp and nod her head jerkily.
"It's alright." The half-orc woman tenderly took Lissandra in her arms and pulled her close. "You just stay right here until it all feels okay again. You're safe now."
Gratefully, Lissandra allowed herself to be pulled into her lover's arms, until her breathing settled, her heart slowed and her eyes grew heavy once more and she fell back into slumber.

For Fenice vi Aetier, the first thing that would come to mind is "ah, finally, Death has come to collect His due." For those eyes could only belong to the Hound that guides souls into the Lantern Bearer's grace, red like spilt blood upon the stone.
She would greet it with grace. Not as a friend nor foe, but simply as an inevitability, head held high as a person of her rank would be. Death could not make her mother kneel and for Fenice, it would be the same.
Some part of her would feel relief. The long wait was finally over; the deadborne would be laid to rest. No longer would she burden the world with her cursed existence. But a greater part of her would feel only anger. She would rage against the unfairness and injustice of it all, for she had so much left she wanted to do, and here she is having accomplished nothing. She has lived and died amounting to nothing more than being an odd anecdote in the pages of history, to be forgotten by everyone and everything.
As if she never even existed.
