Happy Thursday! On Thursdays here at XSO Shell, we are going to write about healthy snacks to make for our athletes, so they can be in their top shape!
Having kids who are into extreme sports, takes a lot out on their body. This is a great recipe that is healthy and promotes the good fats needed for a sharp mind and a fit body to pull off some of those crazy stunts they do! Rich in fiber, potassium and other essential nutrients, guacamole can help keep you healthy and active. Kids love eating guacamole and chips but it's also great with carrots. What about using guacamole instead of ketchup on a burger? Yum!

XSOShell’s Steezy Guacamole
Avocados
Onions
Tomato (not pictured but delicious)
Salt
Chili powder
Cilantro (optional)
Cut open the avocado and scoop out into a bowl.
I like to cut my onion like a grid =) and then do one short cut with the onion laying on its side...that gives me diced onions fairly fast.
Add some onions, to taste.*
Add some chili powder about 6 shakes...
I roll up my cilantro at this point into a small ball and chop finely...takes about 10 seconds.
If you wanted to add tomatoes, this would be where you would do that =) Cut the tomato in half and take out the seed and liquids... then dice the tomato roughly. This is also the place where you could also add some layer of salt to the tomatoes and then add to the guacamole, to taste.
Add some salt, a little at first...then try with chips before adding more.
Mix up the guacamole so it is chunky but smooth too!
And serve...Eat immediately, but you will anyway!
*I always remember Emeril saying, “You can always add, but never take away…” so remember that :-) when adding the onions, chili powder or salting it and try it with the chips too before adding a ton of salt… chips tend to be salty, which adds to the saltiness of guacamole! ***Here’s a tip for novice beginner guacamole makers… keep one avocado out and if it’s too salty, you can always add the extra avocado to save the dip, literally, for the party! ***
