Since Maul is a reflection of Palpatine, the Maul-Devon and Palpatine-Anakin relationships are full of interesting character contrasts. Something I really like about Devon's interactions with Maul is that she's not really buying into any of his crap, and she's aware of what Maul is trying to do to her, making her corruption radically different from Anakin's.
From the start, while both Maul and Palpatine are manipulative, Maul is comparatively upfront about who he is, though he still tries to make Devon feel responsible for his aggression towards her. Early in their first fight, Maul easily gets past Devon's defense. After getting a blade to her neck the first or second time, she knows Maul isn't actually trying to kill her. She's in an unusual position where, though she's still actively fighting back, trying to escape, and getting her ass kicked, she has less reason to fear for her life. Maulās not planning to hurt her (much (yet)) and Devon knows it.
Even after Maul rescued Devon and Rylee, she's ready to bolt because she remembers the last time she was "free" to leave. She still gave Maul a chance to prove his sincerity, she only ran off when she heard him and Rook planning to take her off-planet. Then when she runs, Maul gets annoyed and cuts her off because no you're not supposed to run away again, you're supposed to stick around and get slowly corrupted, you're doing it wrong. Despite the next confrontation being more in Devon's favor, out in an open, lit area with her lightsaber, Maul still easily overpowers and restrains her using the Force, but she keeps fighting every second. She might not understand exactly what Maul has in mind, but she's aware he's interested in her specifically and she avoids him.
Despite how angry and frustrated she is with the state of her life, which she is looking for ways to change, she doesn't treat Maul as a serious option. She considers making an alliance with him to fight the Empire and does stop fighting him in favor of attacking imperial forces, but she still wants Daki as her master, which is why she broached the subject with Daki instead of hiding it. When she hid details of her encounters with Maul from Daki, it's not because she's considering betraying her master, it's because she's unsettled by Maul and doesn't like talking about him.
Devon never turns against Daki in favor of Maul, it's only after Devon loses any alternative that she accepts Maul's offer of training. Even abandoning Daki's teachings isn't done out of bitterness towards her master like Anakin vs Obi-Wan, it's grudging acceptance that she can't survive against the Empire while still following Daki's example.
I don't think Devon's arc is about giving into temptation. She's not embracing darkness to get everything she always wanted, everything she wanted is lost forever and she's settling for less.
