Peanut Butter Stuffed Brownies - 5/5

Sugar Cookies - these were good! Fun to make my own cookie roll, I've never done that before. I didn't have almond extract (??? how) or demerara sugar ((and was just trying to use up Christmas M&Ms don't worry about it)) so I'd like to make them again properly. Definitely a more sophisticated sugar cookie, the flavor was really nice.

Pro-tip, I got the book from the library to test some recipes before deciding if I wanted to buy it. You can too!

NOTE: I baked these for 13 minutes.

Brownies - there's a good chance I still haven't tried these before this posts from the queue because oops all desserts'd this month so they've been hanging out in the freezer. THESE ARE VERY GOOD!! Definitely underbaked with my notes below so add some time but they're really tasty. It was fun making and placing the pb layer, would recommend just for whimsy.

NOTE: I used a 9" pan and baked them for about 28 minutes. The edges were definitely done but the center was still pretty gooey.

Oh this is a common scam I find at work. Any file that:

isn't jpg, jpeg, pdf, or png

Is a file extension you don't recognise (this one is a visual basic file, used for scripting, but others like exe or bat are used)

has a very low or unexpected file size (this one's is less than 1KB, or 0.001MB, a good reference should be at least 500KB)

Is likely a scam. Stay safe kids.

Chocolate M&M Cookies - 5/5

These are great! Love these. Don't worry about why there are Christmas M&Ms in something from April.

I tried making these a year ago and they turned into flat awful inedible pancakes. I can only speculate on what went wrong so,

Notes:

Use a scale and metric measurements (it worked this time and I didn't do it the first time)

DO NOT use dutch cocoa (apparently non-dutch cocoa can react in a way that dutch cocoa can't, so that might have been a problem last time if I tried to use my dutch-processed dark instead)

Bake for 9min if you're making smaller cookies

Great way to use leftover seasonal M&Ms that your mom bought even though no one really eats them on their own

March Baking 2026

No-Bake Nutella Cheesecake - 4.75/5

This was really good! I was too lazy to make the crust so store-bought was fine. I was also too lazy to make the ganache but I think it would've really brought everything together. Either way, this is really tasty. It doesn't have a strong nutella flavor but I feel like nothing ever does so maybe that's a me problem.

NOTE: if you're using a pie crust, halve the filling recipe.

Vanilla Cake with Ermine Frosting - 4??/5

User error!!! I cooked the frosting bad (not long enough) and it didn't set right. And then I let the cakes cool too long because I got caught up playing Nightreign so they got a wee smatch dry. But this would probably be really great if you did it right!!

Notes for next time: - cook the milk and flour all the way, it will take a long time - cool the frosting again before using it?? especially if the butter was too warm
