With lower water temperature even at zero ºC, the tea becomes sweeter because of Theanine, an amino acid that triggers sweet and umami flavors. If you increase the temperature of water to 80 ºC, the tea gets more bitter and astringent, but with more aroma due to Catechin, a kind of polyphenol. In addition to that, Sencha has a lot of health benefits.
