Peach and blueberry rustic tartlets

Ingredients for 5 tartlets: Puff pastry, 3 peaches (I used 2 yellow and one white), 2 handfuls of blueberries, 2 TBS of brown sugar, some almond meal (about 2 TBS per tartlet), 1 teaspoon of vanilla extract, some lavender

Preheat oven to 200°C, line a baking sheet with parchment paper. Roll out puff pastry and use a bowl to cut out 4 little discs (use a rolling pin with the rest of the dough for the fifth one). In a bowl, mix the blueberries, the brown sugar and vanilla. Mix and set aside. Peel the peaches and slice thinly. Sprinkle the almond meal on each tartlet, spoon out the blueberry mixture in the middle and put peach slices all around it. Be generous :-) Fold the dough towards the centre to partially cover the peaches. Brush the dough with some vegan butter or almond milk (this will give your tartlets a nice golden colour). Bake for about 25 minutes. When cool, sprinkle some lavender on them. Enjoy! Bon appétit!
