Potato Nachos with Butternut-Walnut Nacho Cheese Sauce
A healthier, whole foods vegan version that’s still immensely satisfying!
In the nacho cheese sauce: butternut squash, walnuts, soymilk, lemon juice, garlic, hatch chilis, nutritional yeast, smoked paprika, cumin, chili powder, white pepper, mustard powder, cayenne, black pepper, and himalayan salt.
For the toppings: black beans, red onion, red bell pepper, parsley, avocado, salsa, and kite hill unsweetened almond milk yogurt as a stand in for sour cream. YUM!
