Ingredients: 6 large eggs. 1/2 cup cooked chicken sausage, diced. 1/2 cup fresh spinach, chopped. 1/4 cup red bell pepper, finely chopped. Salt and pepper to taste. 1/4 cup shredded cheddar cheese optional. Cooking spray or oil for greasing muffin tin.
Instructions: Preheat your oven to 350F 175C and grease a muffin tin with cooking spray or oil. In a bowl, whisk together the eggs until well beaten. Season with salt and pepper to taste. Add the diced chicken sausage, chopped spinach, and finely chopped red bell pepper to the egg mixture. Mix everything together until well combined. Pour the egg mixture evenly into the greased muffin tin, filling each muffin cup about 3/4 full. If desired, sprinkle each muffin cup with a pinch of shredded cheddar cheese for added flavor.
