It took me a few seconds to realize this is new! The art style and the animation style are so similar to the originals that the only tells I could find are the higher quality from the ones I grew up with and they were never in a sushi restaurant in any of the old shorts I remember.

So there’s a very good reason all these other people are failing to slice through all of the tatami mats. They’re substituting power for draw.

A sword is sharp. If you swing it at me it will bite into my flesh. But because my flesh is more dense than air, it will rapidly lose speed and stop cutting in fairly quickly. And then it will stop.

In order to increase the depth of the cut, you need Power and you need Draw. Power is fairly self explanatory, but draw means dragging the edge of the blade across the wound to allow the cutting edge more sawing action to the flesh.

Like cutting a chicken breast. You don’t put the knife against the meat and then shove it down against the cutting board. If you did, you’d cut the meat a -little- and then just kinda squish it.

You draw the knife back toward your body to slice the chicken. So to do you draw the katana back toward your body to slice the tatami.

In the video, the people who get through the most Tatami mats strike the first mat close to the crossguard of the katana, then draw the blade in toward their body so that the tip becomes wedged in or strikes against the last tatami mat.

Those who get the least amount of depth tend to keep the sword at or near extension from their body, making no draw whatsoever, so it cuts into the first mat and then stops.

The Master uses both the power his students wield, and the technique of drawing the blade to get a full cut in one beautiful swing… but.

Notice the overreach at the end. He loses control over the Katana as it swings past his left hip. The blade starts moving upward relative to the ground, but along the flat of the blade rather than the edge, or striking surface.

He recovers quickly. But he put way more power into that strike than was needed. All of the confidence you see is feigned and practiced:
