The traditional fried treat is given a delightfully tropical twist with these Pineapple Doughnuts. They have an irresistible burst of flavor from the sweet pineapple.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup canned crushed pineapple, drained. 1/4 cup unsalted butter, melted. 1/4 cup milk. 1 large egg. 1 tsp vanilla extract. Oil for frying. Powdered sugar for dusting.
Instructions: Mix the flour, sugar, baking powder, and salt together in a mixing bowl. Combine the crushed pineapple, melted butter, egg, milk, and vanilla extract in a separate bowl. Mixing until a dough forms, pour the wet ingredients into the dry ingredients. Heat oil in a large pot or deep fryer to 350 degrees Fahrenheit 175 degrees Celsius. Dough spoonfuls should be fried for two to three minutes on each side, or until golden brown, in the hot oil. After removing, drain the doughnuts on paper towels. When serving, dust with powdered sugar.
