These Caramel Mocha Ice Cream Cupcakes are a tasty treat that taste like rich chocolate, smooth caramel, and a hint of espresso. These mini frozen treats are great for any event and are sure to satisfy your sweet tooth.
Ingredients: 1 cup heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/4 cup cocoa powder. 1/4 teaspoon salt. 1 teaspoon instant espresso powder. 1/2 cup caramel sauce. 1/2 cup mini chocolate chips.
Instructions: Put heavy cream, whole milk, sugar, cocoa powder, salt, and instant espresso powder in a saucepan. Stir the mixture all the time over medium-low heat until it's hot and the sugar is gone. Take it off the heat and let it cool down all the way. Add the caramel sauce and mini chocolate chips after the cake has cooled down. Fill up each cupcake liner about three quarters of the way to the top with the mixture. It will take about 4 to 6 hours or overnight to freeze until it is firm. If you want, you can serve it with whipped cream, extra caramel sauce, and chocolate shavings on top.
