Honey Cake (Medus Kūka)
Today’s beginner bake comes with a little story, because this cake isn’t just delicious, it’s part of a tradition that’s been passed down through Latvian homes for generations.
Medus Kūka, or Latvian Honey Cake, is a comforting layered cake made with warm honey, soft cream, and simple ingredients. It’s often baked for celebrations, family gatherings, or just those long evenings when everyone is sitting around the table sharing stories.
What makes it special is the time it takes, not difficult time, but slow time. You make thin cake layers, one by one, letting the scent of honey fill the kitchen. It’s the kind of bake that teaches patience in the gentlest way. Many Latvians say it tastes even better the next day because the flavours have had time to settle into each other… almost like memories.
So today, I’m sharing a simplified, beginner-friendly version, perfect if you’re new to baking or want to try something with a little cultural sweetness behind it.
Ingredients:
Biscuit Dough:
100g Butter
4 Tablespoons of Thick Honey
3 Eggs
150g Sugar
200g Flour
1 Teaspoon Baking Powder
Filling:
300g Sour Cream
150g Fresh Cream
Recipe:
Preheat oven to 180°C.
In a pot melt butter and honey together, keep stirring until both are fully melted, don't let it boil. once melted take off heat and let it sit.
In a bowl add 3 eggs, and sugar, using a mixer, mix it all together until the mixture becomes white and fluffy. Add in slowly the honey and butter mixture while mixing at the same time. Add in the flour and mix.
Spread the mixture out on 2 or 3 trays lined with baking paper. Ensure to make thin layers. Bake in the oven until it becomes golden brown (approx 8-10mins).
To make the filling mix together the Sour cream and fresh cream.
Gently remove the biscuit from trays and cut it in half, 1/4, or the shape/ size you want the cake to be.
Begin by adding the filling on to a slice of your cut biscuit, add another layer of biscuit on top, add another layer of filling, and repeat the process until you are satisfied with the size.
Optional:
Spread out the remaining filling on the cake to cover it. Add the crumbs of the remaining biscuit on to the cake. and top it with fruits of your choice.
