Raspberry and White Choc Muffins

This is a fabulous recipe that I used in food tech last year I think. I believe it was my friend’s mums recipe be warned these muffins are reaaaal tasty.

Ingredients:

2 cups plain flour 1 cup caster sugar 2 tsp baking powder 50g butter (melted) 1 cup milk 1 egg 1 cup raspberries (frozen, thawed) 180g white choc chips.

Method:

Preheat oven to 180 degrees

Sift flour and baking powder into a large bowl and stir in sugar

In another bowl whisk butter, egg and milk together

Add the wet to the dry mix as well as the raspberries and choc chips

Mix until just combined and fill a patty pans in a tray ½-3/4 full

Put in oven for 20-25 mins and take out when golden brown

havent done a review in a while but meh its better than studying

REVIEW: Soft gooey centre when warm, definitely a keeper (the recipe) just wish i hadnt forgotten about them when I turned then around for the last few minutes (a tad crispy but not burnt burnt thank the gods) 

love me some triple choc cookies (especially subway mmm cos i happened to work there) OOH SECRETS but these are finally some competition to those godly ones of subway.

Triple Chocolate Cookies

hey there! so today I did my english exam (year 10 end of year) where i bullshitted about To Kill A Mockingbird and morals and life lessons and all that for an hour and a half and then i came home and it was like 11 so i decided to BAKE YAY

recipe:

110g/4oz Butter

200g/7oz Soft light brown sugar

1 egg

1 tsp Vanilla extract

165g/5 1/2 oz Plain flour

Pinch of salt

1/2 tsp Baking powder

1/2 tsp Bicarbonate of Soda

30g/1 1/2oz Cocoa Powder

100g/3 1/2 oz white chocolate chips

100g/3 1/2 oz Dark chocolate chips

Method

1. Cream butter and sugar together, add vanilla and egg and beat.

2. Stir in flour, cocoa, salt, baking powder & soda.

3. when combined stir in choc chips.

4. spread small balls of dough onto tray and flatten slightly with fork

5. bake for 10 minute (cookies begins to crack on surface) they will be soft but will harden when they cool.

Strawberry Yogurt Cupcakes

I found this recipe online for plain yogurt cupcakes, i decided to be breative and make it strawberry, using strawberry low fat yogurt instead.

heres the recipe ->

2 1/2 cups flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 4 tablespoons butter, softened 1 cup sugar 2 large eggs 1 teaspoon vanilla extract 1 cup nonfat yogurt

preheat the oven to 350 degrees. Mix the flour, baking powder, baking soda, and salt in a medium bowl. In a large bowl, mix the butter and sugar until well blended. Add the eggs to the butter/sugar mixture. Gradually add the flour mixture and yogurt to the butter/sugar mixture. Fill muffin molds 2/3 full and bake for about 20 minutes until it passes the clean toothpick test.

Now for the icing i used my basic icing of

>bit of butter (softened) >strawberry Jam (about 2 spoons) >A heckload of icing sugar (about 1-2 cups) > enough milk to make icing the right consistency (I made mine a bit too runny)

basic vanilla/choc cupcakes :)

I've had this recipe for a while and it is foolproof cupcakes :)

its one of my best friends birthdays in 2 days and i wanted to mix it up a bit so i made half choc half vanilla mix and made some hermaphrodite cupcakes too.I also did a double batch.

here the recipe

ingredients:

125g butter (softened) 125g caster sugar 2 eggs 125g SR flour (sifted)

(for choc) also add 2 TBS cocoa 1/3 cup choc chips (melted)

Method: 1.Preheat oven to 180 degrees c 2. beat butter and sugar until fluffy, add half eggs, beat then other half and beat. 3. Stop mixer and stir in flour 4. Spoon batter into patty pans (half full) 5. Bake for 15-20 mins (bounces back)

for the icing I just do my mix of icing sugar, butter (small amount) and boiled water (tiny amount)- also with food colouring :)

RESULT : deeeeelish!! It’s a nice texture of carrot for a cupcake something that Kath and Kim would say: it’s nice, it’s different, it’s unusual :)

Carrot cupcakes with cream cheese icing :)

hi this is my first post on my blog: The ProcrastiBaker

I'm Alannah, fifteen on a boring Sunday afternoon

today I made carrot cupcakes with cream cheese icing

I used my traditional Carrot cake recipe but just put the mixture in muffin pans to make cupcakes

Carrot Cake:

2 Medium Carrots- grated

2 cups of self rasing flour

1 cup of raw sugar

3/4 cup of vegetable oil

3 eggs- beaten well

1tsp mixed spice

1tsp cinnamon

1/2 cup coconut

Method:

1. Preheat oven to 180 degrees and mix beaten eggs and oil together in a small bowl.

2. Combine the other ingredients in a large bowl, add egg mixture and mix well (add milk to make thinner if you want)

3. Grease and line a 20x20 cm pan and pour in batter- Bake for 50 mins- 1 hour

OR

for cupcakes grease muffin tins and bake for around half the time

4. Cool on a wire rack and mix some icing sugar, butter, (smallest amount) boiling water and cream cheese to make icing

5. top with icing and  sprinkle with grated carrot for decoration.
