Quick tip … use powdered sugar instead of flour to roll out your cookies. It will melt away in oven (as long as its not too much) and doesn’t make the dough stiffer. Works like a charm. Also when rolling out sugar cookie cutouts: use two sheets of parchment and roll cookies straight from mixing bowl instead of having to wait to chill.
