To my family in Italy, Grazie Mille!
To some of you who don't know, I engaged in a practicum in Italy to broaden my horizons and to harness my skills as a chef. Yes, I learned a lot, and I found a lot of techniques, methods, and recipes; but the thing that made me really love Italy is my family. La Fermata. The restaurant whose chefs are very funny and really loves cooking.
Today, I finished my 2 month practicum with them, and my partner and I decided to give them a simple gift. We each took a shot of our dear family, and I edited mine. I will introduce you the first one, my blood brother, Andrea Ribaldone.
He is the co-owner of La Fermata. He would always say to me when I am working, "Cholo is my friends" which always makes me laugh. He is like a father to me. We jogged once and we always joke around; but when it comes to work, then everyone should concentrate. He taught me about the quality of food. Even if it is expensive, it is nothing compared to making your customers happy.
Next stop is Ricci. I dont know his last name, but boy, I do love his attitude in cooking.
Ang cool niya kasi he always smiles. As in! kahit busy na lahat, when he cooks, nakasmile lang. Sabi nila, he's "contento" meaning content sa buhay niya. haha. very very admiring. He is the co-owner of La Fermata. He is the master and long time friend of Andrea. haha. So you can imagine how good he really is. He has a good taste. He taught me how to be organized.
Next is Tetsiana. Ricci's wife. :)
When i first saw her, she was shouting; but at the same time smiling. At first akala ko galit siya, yun pala normal lang niya yun :)) she is the sweetest and most lovable person in La Fermata. She is like my rich ninang :)) haha. very sweet indeed.
Next would be my two masters. Starting with Tetsuo Ota.
Tetsuo is the sous-chef of the restaurant. He is responsible for the meats, sauces, and basically anything not pasta. The most intriguing part of him is that he is really really good in pastry. Before we left, he made us a cake and mehn.. it was delicious!

Next is my mentor, my master in pastry, Amal El Achhab :)
She taught me how to be careful. She taught me how to be exact and how to have steady hands :) If it wasnt for her, I would still be the kid who is lousy and messy in the kitchen. :)) she taught me how to be neat. She is like a big sister to me. :) She taught me Italian! :) hehe. and she's marocinian :) I am so happy i was able to be under her for a month :) i will definitely miss her :)
My crazy friend, Giacomo. He is very brilliant, but when the pressure is on, he tends to panic and black out. HAHA. But if it wasnt for this guy, I would not have any other friends. He also planned to go to Philippines to visit because of how we treat him. He said, he loves the company of a Filipino, and we are his first Filipino friends. haha. mabuhay! :)
Fede is next to Tetsiana. She is the person who always helps tetsiana in the sala. She has good taste in wine, and she is always there for you when you need help. :)
All these i will cherish. Thank you La Fermata for making my stay worthwile :) Thank you for the bonding, and the idea that i can always be counted in the kitchen. I never felt left out :) Thank you very much,
