As someone who is Irish and Native American, and who's mother is a history teacher, I can confirm that the Irish were treated lesser than human. The history of it is insane, and human's have done this to one another for a long time. It's not something we should be ok with, but something we accept from our history and learn to move past in society.

Hi, question for Jackson. I know you're a chef, and was curious if you knew whether or not onions actually contain an enzyme that helps break down meat? I keep looking online, but I'm finding conflicting information. I don't know who's actually a reputable source. I'll probably test it myself, but I'm just curious. Thank you.

Onions contain proteolytic enzymes, which is what we commonly use for breaking down proteins in various ingredients.

That being said, I dont know the ratio of onions or the length of time it takes to make a real difference off the top of my head. I would imagine that the finer it is cut, the more enzymes are relaeased. So small cut meat and a marinade made from juiced or blended onions would likely have the best effect.

The most common and likely best sources for these enzymes however is in fruits like Kiwi and Papaya. Or even honey. The former (especially kiwi) has acid, which denatures proteins and makes meat more tender. The issue is that kiwi and papaya and stuff like that have specific flavors that dont work well with other dishes... even if others work better at tenderizing, the flavor probably isnt going to work with the dish as well as onions.
