This is why honey is not vegan.
The problem here is that honey, especially if you buy it ethically from an apiarist, isn’t actually detrimental to the well-being of the bee or the hive. In the wild, honey is used as a food stock, but in a domesticated honeybee colony, the bees are fed quite well, and so the honey is a surplus.
The alternatives, like sugar, relies on monocrops in third world countries, with transient labour. Growing up, there was a sugarcane field by my house, and I’m sure the Haitian men who worked backbreaking hours hacking a machete through knife-bladed leaves in 40 degree heat for a couple dollars a day would have traded a testicle to be a Canadian honeybee. Stevia’s going the same way, iirc.
Additionally, apiarists are actually huge proponents and activists for sustainable bee-keeping, and it’s estimated that the domesticated hive may be the last great hope for declining populations, because we can optimize their chances for survival.
It’s their life’s work, sure, but it’s not the death of them to use it responsibly.

A quick googling says that a honeybee lives 1 to 3 years, between a few common types.
So when you get a hive, it has a bunch of panels that the bees build hives on, the kind that you pull out of the top like files (only one kind of hive, but go with me on this). A beginner hive has 5 to like 7 of these panels.
So you give them this living space, and you give them a few months to settle in and get building, and I think it’s about 8 months that you can get your first harvest of honey from them. Google says that’s about 30,000 bees in that small hive that’s starting up. The way that you harvest is to pull out all but like two of these files, and take the honey out through whatever bee-friendly harvesting method you choose. Those two you leave behind are the colony’s food for the next several months. Before they fill the rest of the files up all over again.
Now, watch a youtube video or whatever of some backyard bee-raisin’ folks. I’ve seen a first harvest completely cover a folding card table with standard teddy bears and pint jugs. That’s a whole ton of honey.
And they’re going to make that much again, those same bees (depending on your breed). They might make that much again several times before the lifecycle comes around completely. And even doing that, their numbers will grow to MAX BEES, as a couple messages boards are awesomely putting it, of 100,000 bees in that same hive, eating off two of the file things.
So I’m not terrible worried.
