Quinoa coconut curry
I kept looking for a nice quinoa curry dish and of all the recipes I’ve read there was alway something which turned me off, i’m to picky :) So I decided to act like one of this grown ups who can cook and made up my own recipe! I made this and even if I do say so its gorgeous!! Decided to put it up here cause my tumblr seems to be my recipe book!
I make this in large quanitites and freeze it for lunches, tastes great hot and cold.
Ingredients
This makes 8 portions and its something like 300 cals a portion. I worked it out before but not sure of the exact numbers.
4 chicken breasts
3 bell peppers
2 red chillies
500 grams of Quinoa
two handfuls of spinach
5-6 tablespoons of hot curry spice
1 tablespoon of paprika
1 tablespoon of chilli power
750ml vegetable stock
750ml coconut milk ( alpo )
Directions
Wrap the chicken in tin foil and cook in a preheated oven at 200′c for 30 minutes. Once the chicken has cooked shred it.
Dice the bell peppers, chillies and tare the spinach.
Into a large pot mix rinsed quinoa, vegetable stock and coconut milk and spices. Bring to a simmer and stir frequently.
Fry the bell peppers and half the chillies until soft. Add spinach to the frying pan for about 20 seconds to wilt.
Once the quinoa has absorbed most of the liquid add in the shredded chicken, fried vegetables and renaming chillies. Mix well until all liquid has been absorbed.
