Bbq chicken legs with spaghetti squash mac n cheese
Already dreaming about the leftovers we will be eating for lunch tomorrow
For the spaghetti squash mac n cheese I cut the squash in half, scraped the seeds out, placed on a plate with a tiny bit of water and wrapped everything in plastic wrap. Microwave for 15 minutes. Scooped the squash out, place on paper towel to dry. Heat up some heavy cream, add some cream cheese, then add cheddar jack and whisk until smooth. Season well (garlic, salt, pepper, nutmeg, chili flakes). Mix in the the squash, top with sharp cheddar and parmesan cheese and then bake until golden.
Another Hasselback chicken meal. I am loving how easy and delicious they are!!! Kevin says they look fancy too so-bonus!
Ingredients: *2 Chicken Breasts *4 oz of Muenster Cheese *4 Slices of Bacon *Oregano, Parsley, Red Pepper Flakes, Minced Garlic, Salt, and Pepper to taste
Instructions: *Preheat oven to 350F. *Cut slits in the chicken, short ways, without cutting all the way through to the bottom of the chicken. Youāll have 5-8 slits per breast. *Stuff the slits with cheese and bacon. *Add the spices on top. *Place the Chicken Breasts in a greased casserole dish. *Bake for 30 minutes. *Enjoy!
Hasselback Chicken is the easiest thing to cook and you can alter it to any taste!

OMY so I am getting tons of questions about the crĆØme brulee recipe!
SOOO here is my version of the one posted above:
2 cups heavy cream
5 egg yolks
2 teaspoons vanilla extract or vanilla bean
5 packets truvia
5 ramekins (aka oven safe tiny bowls, pictured above)
Preheat oven to 350
Heat cream and vanilla extract to almost boil, (or remove insides of vanilla bean and place empty shell and insides into cream, remove shell once the cream is heated)
Blend egg yolks and stevia in heavy sauce pan
Over low heat SLOWLY add hot cream to egg yolk mixture stirring constantly
When mixture coats back of spoon remove from heat
Distribute mixture into 5 ramekins, place ramekins in casserole dish and add water AROUND the ramekins (to make a water bath, pictured above)
Bake for 30- 40 mins (I baked mine for 35)
Place in fridge for 4-5 hours

Happy Tuesday everyone! Donāt we all love a super simple snack that is quick to throw together? Hereās my go to- cheese chips!
Step 1: Get some ultra thin sliced cheese. It can be any kind you like but I always go for cheddar. Also preheat oven to 325! Step 2: Cut each slice into four squares and place onto parchment paper. Step 3: Bake for 15-ish minutes, depending on how well done you like them. Step 4: Let chips cool and then serve with something to dip them in!

This is it, y'all. This is going to be my signature dessert. Y'all invite me to a pot luck? Housewarming? Holiday? Simply dinner? Im bringing these.
Sugar free, gluten free, vegan friendly (gotta be sure to use an egg substitute!), keto friendly, paleo friendly, and the best damn cookie I have had in my life. (Cookies have ALWAYS been my favourite kind of dessert but hard to get just right on keto. These are just right.)
The cookie layer is chewy and moist without being āsoftā. The peanut butter layer is rich and slightly salty. The chocolate layer is soft like the inside of a truffle and your teeth simply glide through it despite it being kept in the fridge. And each layer is in perfect balance with the others. šāØ

Today was my first day of orientation at a mental health facility!! I'm so excited to finally start my dream!! Now, off to start working on my bachelor's, then afterwards go to grad school so I can become a nurse practitioner!!

Get ready, cause Iām gonna give ya all I know on the BEST low glycemic all natural sweeteners!
The top picture is composed of the low glycemic sweeteners I use. I can not have sugar- but more importantly I canāt have foods that are high on the glycemic index and might spike my blood sugar- so I always try to aim for 0-1 on the scale!
Top photo left to right: ā¤ļø Natureās Hollow Sugar Free Honey Substitute. This is sweetened with Xylitol which has an index of 7 which is the highest I use, and I use it sparingly. But for the average person who just wants to cut sugar- itād be fine! It is a NATURALLY occurring low-calorie sweetener found in fruits, vegetables and certain hardwoods. IT ALSO IS GREAT FOR TOOTH HEALTH!! It kills the bacteria that causes cavities and with regular use can help to remineralize the enamel on your teeth. š Swerve (Erythritol). This is my FAVOURITE! Well this combined with Stevia Glycerite that is. Erythritol has a 0 glycemic index and is 0 calories! Itād be a GREAT alternative to sugar, but I suggest grinding it in a coffee grinder or buying the powder version if you plan on putting it in your coffee. It is all natural and is found in some fruits and fermented foods. And it doesnāt cause stomach upset like some other sugar alcohol sweeteners (Maltitol is the WORST). š Stevia Glycerite is liquid stevia that has been made without the use of alcohol to extract the sweet we and therefore it does not have the bitter aftertaste that most stevia has. With a glycemic index of zero, and the fact that only a couple drops gets you the amount of sweetness you need this is a badass alternative to sugar!! š Pyure brand blend of Erythritol and Stevia. This is great for simply needing to sweeten drinks- and is also 0 glycemic, 0 calories and all natural and it is a blend of stevia and Erythritol BUT the balance of the blend I find does NOT work in baked goods as well as measuring out swerve and stevia Glycerite on your own. Great for a cheap and easy alternative to coffee sweetener though!! š Yacón Syrup. This sweetener has a glycemic index of 1, and is a great replacement for blackstrap molasses in baked goods- and it is badass for digestive health as it is a prebiotic. It is an all natural thick syrup that is pressed from the Yacón root. You only need the tiniest bit and itās best in recipes.
NOW LETāS TALK ABOUT POP! Love soda? Hate the nasty stuff in most diet sodas like Aspartame and artificial colours? ZEVIA IS THE ANSWER! It is sweetened with a 0 glycemic blend of Stevia, Erythritol, and monk fruit (I think monk fruit is only in some flavours.) and has NO artificial colouring, is Vegan friendly, AND LOOK AT ALL THE FLAVOURS IT COMES IN!!!!! You can get them on Amazon, at most grocery stores, all over the place!!!! Perfect substitute!!!
Iāve also included a little chart showing some sweeteners and their glycemic index and just how wildly different they are. The higher the glycemic index the bigger the spike in blood sugar, the more cravings, and in a lot of cases the more calories/carbs. Sticking below 7 on the scale when avoiding sugar is my best advice.

Here in Texas there is one thing you gotta love because itās every where and itās cheap and packet full on tasty vitamins and healthy fatsā¦AVOCADOS!Ā
RECIPE 002:Ā Avocado Stuffed Breakfast with EggĀ
Feeds 1-2 people
Total Price:$4.18 Per Plate: $2.09
What you will need:
1 Large Hass Avocado- $1.68
2 eggs- $0.03
3 oz Pancetta/or Bacon/or ground Sausage crumble/ or Chorizo crumble ($ Ranges) Average $2.47
Foil
A small baking pan
-Optionals-
A small dash of Chili powder
Salt & pepper
A spoonful of Salsa
A pouring of Hot SauceĀ
A Dolp of leftover Avodcado
Preheat your oven to 400 degrees. Get your avocado and slice it in half and take out the seed then take out about ½ of the inside of the avocado and save it in a bowl next youāll crack each egg and put in the avocado. Add Salt and pepper or chili powder to your liking. Line your pan with foil and place the avocados in the center about 2-3 inches apart. Sprinkle with whatever meat of your choice and place it in the oven for 15-20* minutes.
Once itās done take it out of the oven and let it cool for 2-3 minutes.
I like to top mine off with the left over avocado, salsa, or hot sauce. :)
*Itās important to note the baking time depends on your liking of your eggs, a shorter time say about 15-16 minutes will give you a runny egg however, 20 minutes will give you a completely cooked egg.
