I wish I knew what it was like to be skinny. I wish just for one day I could be thin, just to give myself motivation. It’s hard to work for something that you know nothing about. It’s so hard to lose when all you’ve ever been is obese, legitimately obese on a medical scale. It was just a part of you. I just wish I could be thin just for a moment. That’s all I want.
Recipe
So I was looking to online looking at low calorie recipes and found one for veggie quesadillas that’s 85 calories per quesadilla! So I though I’d share it with everyone
Ingredients
2 Sweet peppers (red and/or green) cut into thin strips
One small onion cut into 1-inch long strips
2 teaspoons of olive oil or cookie oil
2 tablespoons snipped parsley or cilantro
½ teaspoon of ground cumin
½ teaspoon of chili powder
1/3 cup of reduced fat cream cheese (tub style)
5 6-inch flour tortillas (I personally am getting whole wheat tortillas instead)
*KEEP IN MIND THAT IF YOU DO FOLLOW THIS RECIPE ALL THE WAY IT MAKES 10 SERVINGS*
Directions
In a large nonstick skillet cook the sweet peppers and onion in 1 teaspoon of oil for 3-5 minutes or until crisp-tender. Stir in chili powder and cumin. Cook and stir for one more minute. Add in parsley (or cilantro) and set aside.
Spread cream cheese on one side of each tortilla. Top with pepper mixture. Fold tortilla over the pepper mixture and press gently.
Place tortillas on a large ungreased baking sheet. Brush tortillas with the remaining teaspoon of oil. Bake in a 425 degree F oven for 5 minutes each quesadilla into 4 wedges.

When I say “I hate my body” I don’t mean “oh I’m a little insecure about my belly” or “I could lose a few pounds” I mean I have physically repulsed by it. It’s horrifying and upsetting to see. I wanna crawl out of my skin.
