Keto Ciabatta Bread (recipe comes from the amazing Marc at the Low Carb High Fat UK facebook group)
Ingredients:
225g Mozzarella Pizza Cheese grated 75g Ground Almonds 13g Psyllium Husk Powder (POWDER is crucial, cannot be just husk! I used this one ) 45g Cream Cheese 1 large Egg ½ tsp Salt ½ tsp Pepper
Instructions:
Preheat oven to 200/180c fan. Place cheese in a bowl and microwave the cheese until fully melted and pliable, around 90 seconds. Add cream cheese and 1 egg to the cheese and mix it in well. Add ground almonds, psyllium husk powder & salt and pepper to the cheese mixture and mix together well. As you mix the dough, it should become cool enough to work with your hands. Knead the dough together until you can form a ball. Shape ½ of the dough into a long bun, making sure both will fit on a large pan. Bake for about 30-40 minutes. Then cool on a wire rack.
Sometimes you fall off the wagon for months. Sometimes you tell yourself you’re gonna start fresh on Monday and by Wednesday you’ve already fallen back off. Sometimes you have to restart a 100 times and it’s frustrating. But it will be okay. You can do this. One day at a time

LCHF Keto Brownies (86% Fat)
Nutritional information: 1 Brownie has 160 Calories: 16g Fat (86%), 3g Carbs, 3g Protein.
Ingredients (makes 27 brownies):
300g Pecan Meal / Pecan nuts ground 40g Unsweetened Cocoa Powder 40g Eryrthritol 15ml Liquid Sucralose 1tsp Vanilla Extract 100g Butter (salted) 115ml Double Cream (Heavy Cream) 4 Eggs 1tbsp Baking Powder
Instructions:
In a big bowl, mix the dry ingredients first, then add the sucralose, vanilla extract and cream.
Melt the butter (I usually do it in the microwave) and add that as well, then mix thoroughly.
Before adding the eggs I usually taste to see if the erythritol/sucralose ratio is sweet enough. If it is, add the eggs and mix some more (I use an electric mixer)
Pour into a cake pan (I used a small pyrex, 26x17 cm) and distribute evenly, then put in 180c oven for about 30 minutes.
Once ready, let it cool down a bit, cut in cubes size (I got about 24 squares, with some batter left to make 3 more muffin-sized brownies), and enjoy!

Cream - the best kept secret money can buy.
Good quality thick cream is not cheap.
Fact: Cream has almost no Lactose (sugar) in it, there is nothing to promote spoiling from fermentation.
Good quality cream that has a high fat content is ideal for low carb and keto - and it’s always awesome in coffee.
The cream above has a best before date of the 7th June. I bought it on the 7th of June for a $5 discount. This cream will still be fresh and safe ONE MONTH after the best before date, maybe even longer.
Trust your nose. Manufacturers are a little bit disingenuous and put these dates on well before the product will “go off”. Why? Well if you have to throw something out, you have to go and buy more. Genius!
So don’t be too keen to bin food just because the date on the label has been reached. Trust your sense of smell and taste.
