MINI EMPIRE BISCUITS For Beth and Miss Vanilla Ink as they are her favourites. INGREDIENTS 250g Plain Flour 250g Softened Butter 125g Farola//Semolina 125g Caster Sugar Icing Sugar for decoration Dolly Mixtures for decoration INSTRUCTIONS Preheat oven to 130C//Fan or 150C//Conv Cream softened butter and sugar together in a bowl until light and fluffy Add in the other ingredients and mix until a dough forms Dust work surface with Icing Sugar and roll out the dough until 10mm think Use a circular cutter (50mm) to cut out the individual biscuits Once cut out lay on a baking tray with greaseproof paper on it Bake 40mins turning the baking trays, half way through Once cooled, sandwich the biscuits together with seedless jam Mix some icing together to top of the biscuits and finish with a Dolly Mixture or Cherry if you wish

RASPBERRY AND COCONUT BUNDT CAKE
This was made for the lovely Sarah, as the self appointed Birthday person in the office, I got to flex my baking muscles to create this scrummy, gluten and wheat free cake. Sarah isn't particuarly girlie but I went for it with the pink theme for card and cake.
INGREDIENTS
CAKE
225g Dove's Farm Gluten and Wheat Free Self-raising Flour
225g Caster Sugar
225g Softened Butter
55g Coconut
2tsps Gluten Free Baking Powder
4 Eggs
Raspberries to decorate
BUTTER ICING
170g Icing Sugar
170g Softened Butter
INSTRUCTIONS
Grease your bundt tin and pre-heat the oven to 180C
Bung all the cake ingredients into a bowl and mix
Spoon the mixture into your tin and pop in the oven for 20mins
While the cake is in the oven, mix the icing sugar and butter to create the butter icing, add in some food colouring if you wish
Let the cake cool before icing
ENJOY
CHEESE AND CHILLI SALT SCONES So after posting an image on instagram of these scummy scones, a few of my friends asked for the recipe so here it is guys INGREDIENTS 450g self-raising flour 100g softened butter 200g grated cheese, I used a mixture of Orkney Cheddar and Mull of Kintyre Cheddar 2 tsps baking powder 2 large eggs And milk to make it up to 300ml Extra cheese to pop on top of the scones *this is my cheat element, Jamie Oliver's Keep It Simple Chilli Salt - adds a bit of heat and makes these scones* INSTRUCTIONS Bung everything into a bowl, mix to form a soft dough Knead the dough until smooth Roll out of a floured surface and cut into whatever shape you wish and brush with milk and add a little extra cheese Pre-heat the oven at 230C and bake scones for about 20 minutes until risen and golden ENJOY

ANZAC BISCUITS My first bake from Mary Berry's Baking Bible. They are in the fancy biscuit section, page 225 to be precise. I've adapted the recipe so my friends with food allergies can enjoy them too. I replaced the flour with Doves Farm wheat and gluten free flour, butter with Pure soya and oats with Tesco's free from Porridge oats. Fingers crossed they taste... DELISH!!
LEMON & RAISIN PANCAKES INGREDIENTS 135g plain flour 1 tsp baking powder 2 tbsp caster sugar 130ml milk 1 large egg, lightly beaten 2 tbsp melted butter Zest and juice of one lemon INSTRUCTIONS Sift the flour, baking powder, and caster sugar into a large bowl and add the lemon zest. In a separate bowl, whisk together the milk and egg, then whisk in the melted butter and lemon juice. Pour the milk mixture into the flour mixture and beat until you have a smooth batter. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter. Wait until the top of the pancake begins to bubble, add a sprinkle of raisins, then turn it over and cook until both sides are golden brown. ENJOY
