Johan Paris bakery located at Isetan in Orchard Road is known for churning out French-Japanese classics like croissants, baguettes, brioches, and more with Japanese ingredients inspired like mentaiko and cheeses. My family is particularly fond of their Fluffy Cheese Loaf (S$12.40) which is freshly baked at 3pm and 7pm daily for their Orchard store. You can see there are plenty of cheese cubes embedded within the bread and the top has more shredded cheese. Eat it fresh out of the oven and the flavours are so heavenly. If you reheat it in the oven, the crust becomes crispy and this gives the savoury bread added texture.
PS – Does anyone knows what kind of cheese is this since it doesn’t really melt during baking?
Maybe Halloumi or Paneer with Cheddar on top. 🙂

Pizza with low-Carb crust
INGREDIENTS
Cooking spray for pan
4 large eggs
4 cups shredded mozzarella, divided
¼ cup grated Parmesan
Kosher salt (optional)
Black pepper to taste
½ cup pizza sauce
¼ cup pepperoni, sausage, or any meat you desire.
¼ thinly sliced mushrooms or green peppers
2 tbsp. thinly sliced black olives
Oregano to taste
DIRECTIONS
1. preheat the oven to 425 degrees. Grease a small baking sheet or pan with cooking spray. In a medium bowl, stir together eggs, 3 cups of mozzarella, and parmesan. Sean with salt and pepper, and spread evenly on the baking sheet.
2. Bake until lightly golden brown, about 12 to 15 minutes. Take out of the oven, spread the pizza sauce on top of the baked crust. Top with remaining 1 cup of mozzarella, meat, mushrooms, green peppers, and olives.
3. Bake until cheese is melted and crust is crispy, about 15 minutes more. Sprinkle with oregano. Slice and remove from pan while still warm.
