Lamb Tonnato

The lamb tonnato feels deeply passionate as well.

It’s yet another fish dish/reference.

It’s paired with the lamb Carmy’s been stuck on forever (Syd).

The “dusty” sauce he made in S3 is replaced by umami-rich tonnato that brings all the flavor.

It’s connected directly to his Italian roots and the lamb Syd made at Sheridan Road.

It’s his representation of both of them on a plate.

He already tonnato’ed Syd when he made her that blood orange hamachi dish, but this time, he makes it fully intentionally for her.

The lamb is served rare which preserves the tenderness. His feelings for her.

And he cooks it full of love for her. In service and dedication to her.

She receives it as the second best thing she’s ever eaten. She loves his food! And she’s still the only person in the world who had his blood orange hamachi dish.

Their love is now served and shared with everyone.

I knew a couple, friends of my parents, who fell back in love with one another over their divorce proceedings.

They sat down across from each other with their lawyers and all this paperwork that said 'I want you to be looked after, I'm going to make sure you're ok, I'm willing to give you everything I have to make that happen'

When the clock had run out and they had nothing to gain, all they both only wanted was to take care for each other.

Watching Sydcarmy in season 5 reminded me of them so much. A couple managing a divorced, and through that process, realising how loved they are. ❤️

listen, that was some crotch to crotch hugging. they're not afraid to let the good bits touch.

first thoughts on the bear season 5 sound track:

As much as I love the needle drops in the first season, I think going for a more traditional film score on season 5 was the right move.

The music and sound design in the first season absolutely blew me away, but as the show went on, I felt that the music became overly self referential at times.

Having said that, I find film scoring a bit manipulative and it can be heavy handed when cueing "emotional moments" (like a comedian who uses the intonation of a joke to get you to laugh, even if the joke isn't funny).

This season's score veered into that direction at times, but I think going with a sonic landscape which was distinct from the rest of the show helped prevent it from feeling overly nostalgic and sentimental.

Thematically, it also cued us into the fact that this is not just more of the same: There really has been a change. We're not stuck in Carmy's head. We're not stuck in the 90s. We're not stuck in Mikeys shadow. The Bear is alive, and it's about every person there

The ending of 'Gary' brings a "shit happens and there's nothing you could have done to stop it" energy back to The Bear that I missed after Season 1.

I didn't like that the pasta was the struggle dish in season 4. I thought it was too simple, too few components. why pasta?

Pasta is always the struggle dish.

It's the pasta the Carmy can't get right in season 1.

The pasta recipe is Carmen's inheritance.

It's the pasta that put Sheridan Road out of business.

It's the pasta that Sydney couldn't crack without Carmy in season 2.

Of course Sydney beating the timer on the pasta dish so effortlessly in season 4 is evidence that she's surpassed him, that she doesn't need him anymore, that she's ready to inherit The Bear!

The truth is, for me, it was never about seeing them kiss or whatever. It was always about seeing them acknowledge (to themselves, each other and everyone else) that they are one another's Main Person™️ in and out the kitchen.

Considering the kind of show this is, I think Goodbye is a actually pretty good start.
