Fighting my semi-annual cold so I really needed this today...my version of sausage & tortellini soup. 1 lb loose sausage (or (I use) ground pork with Penzeys Italian Sausage seasoning (1 heavy tsp)) 1 or 2 sweet onions chopped 2 small bags frozen tortellini 1 can petit diced tomatoes or fresh diced 1 bag shredded carrots 1 bag baby spinach 64 oz chicken stock or (I use) bone broth 2 blocks Philly cream cheese cut into smallish blocks Brown the sausage & onions. To a large (6-8 qt) slow cooker add the meet (do not drain!), the broth, tortellini, carrots, tomatoes, and spinach. Press down but do not mix (yet!). Cover and cook on high until it starts to simmer. Once it's simmering, mix all the ingredients and add the cream cheese. Mix again, cover, and turn to low. Stir every 15 minutes or so until the cheese is completely melted and incorporated. Leave it on low another 2 hours or until you're ready to eat. The longer it sits the better it gets.
