Bacon Braised Collard Greens
Bacon Braised Collard Greens
Ingredients:
1 large bunch collard greens, washed and chopped
1/2 white onion
2 cloves garlic, minced
1/2 lb. bacon, diced
1/4 cup fresh squeezed lemon juice
1 Tbsp. chili flakes
salt and pepper, to taste
Recipe
In very large saute pan with lid, cook bacon until about halfway finished.
Add onion, cook until onion is translucent.
Add garlic, cook until fragrant.
Add greens. Coat in the bacon grease and cover with lid.
Cook greens 5-8 minutes, stir occasionally until greens are tender.
Add chili flakes and salt and pepper.
Add lemon juice right before serving.
Notes:
*Lemon juice is optional.
*Bacon is also optional. In its place, use either 2 Tbsp. butter or vegetable oil.

Ingredients:
3 cans Van de Camp's Pork n' Beans
6 slices bacon, diced
1/2 white onion, diced
1 cup gluten free BBQ sauce (I use KC Masterpiece Original)
salt and pepper, to taste
Recipe:
Preheat oven to 350F.
Fry bacon in nonstick pan until about halfway cooked.
Add onion, saute until bacon is cooked through and onion is translucent.
In glass baking dish, combine beans, bacon and onion mixture, and BBQ sauce.
Season to taste.
Bake for 10-15 minutes, until heated through.
Traditional Potato Salad
Ingredients:
5 large potatoes, peeled and diced
3 large eggs
3/4 cups mayonnaise
1/4 cup yellow mustard
2 Tbsp. pickle relish (I use dill, can also use sweet)
1/4 cup green onion, chopped
salt and pepper, to taste
Recipe:
Boil potatoes and eggs until potatoes are fork-tender.
Drain; run eggs only under cold water.
Peel and dice eggs.
In large bowl, combine all ingredients.
Season to taste.
Refrigerate at least two hours before serving.
Oven Roasted BBQ Short Ribs
Ingredients:
1 lb. pork ribs
2-3 Tbsp. seasoning blend (I use Cavender's. Can also use Lawry's or a salt/pepper blend)
3 Tbsp. liquid smoke
3 cups gluten free BBQ sauce (I use KC Masterpiece Original. Sweet Baby Ray's is also very good!)
Recipe:
Preheat oven to 250F.
Place ribs in glass baking dish.
Coat in seasoning and liquid smoke.
Cover with foil, bake for 3-4 hours, or until internal temperature of 145F is reached.
Baste with BBQ sauce and return to oven for another 10-15 minutes.
Notes:
*The liquid smoke and low cooking temperature are what really make these ribs tender and juicy.
*If you're short on time, increase the oven heat to 350F and slightly increase the amount of liquid smoke you use. Bake for an hour to an hour and a half. The lower temperature and longer cook time will make your ribs fall off the bone tender, but the higher cook temp doesn't change that too much!

Smoked Turkey Greens, anybody?

I'm staying by myself for a week, so it'll probably be single serving meals and Frozen Gluten Free if I can get around to buying groceries and cooking.
I'm thinking chicken lo mein tonight... I've already got my grocery list all ready to go. :)
Chicken Fried Rice
-Ingredients
2 large chicken breasts, diced
6 cups cooked rice, COLD
1 tsp. minced garlic
2 tsp. fresh ginger, grated
2 tsp. chili and garlic sauce
2 Tbsp. vegetable oil
1 Tbsp. butter
2 Tbsp. gluten free soy sauce (I use La Choy)
1/2 cup chopped scallions (optional)
2 cups assorted veggies (peas, carrots, broccoli, bean sprouts, bell peppers etc. optional)
salt and pepper, to taste
-Recipe
In a large saute pan, heat vegetable oil.
Add garlic, ginger, and chili sauce to oil, cook just until garlic is fragrant.
Add chicken, cook 6-7 mins, or until chicken is cooked through.
If you are using veggies, add them at this point and lightly saute, so veggies stay crisp.
Add COLD rice on top of chicken, top with butter and soy sauce.
Cook until rice is warmed and golden brown.
Season to taste and serve hot.
TIPS:
If you plan on using fresh cooked rice, slightly undercook it, as it will finish steaming in the pan with the chicken.
If you would like, you can also add eggs. Scramble two eggs as your very first step and set them off to the side. Add with the veggies.
Fresh ginger makes a BIG difference in taste! To grate fresh ginger, peel using a veggie or potato peeler and freeze the ginger. It will last up to six months in your freezer.
Frozen Gluten Free
Today I'm starting a new section called Frozen Gluten Free. Since I don't cook every single day and it's hard to cook for one (I'm housesitting), I'm either eating out a lot, which I don't really have the money for, or I'm buying frozen meals. For the purposes of this blog, all the frozen meals I eat at home or at work will be gluten free so I can maintain it a little more. Not posting recipes every week is really making the blog lack for posts, and I'd like to keep it as current as possible.
How to: Make the perfect grilled cheese!
A lot of my friends have been asking me how to make a really good grilled cheese, because mine come out perfect every time. Golden brown on both sides, with a hot, melted cheesy center. I figured doing a how to would be the best way to get it out there!
What you'll need:
Two slices of your favorite gluten free bread
Two slices of cheese (I usually use one "fancy" cheese, like a Muenster or a good sharp Cheddar, and one slice of processed American cheese for the creaminess it adds)
Three slices of any deli meat (optional, obviously, although honey ham does make a grilled cheese!)
2 Tbsp. soft butter or butter spread. MUST BE SOFT.
What you do:
Assemble your sandwich and place on a paper towel or microwaveable plate. You should do one slice of cheese on each side of the bread and your meat (if you use it) in the middle.
Microwave your sandwich for 10-15 seconds. This heats all your filling and starts melting your cheese, so you don't have to keep cooking it in your pan to get it warm in the middle. Ta-da, no burned bread!
Heat a nonstick skillet over medium heat until water dances across the surface.
Spread your softened butter on each side of the bread. If your butter isn't soft, it'll tear through your bread and leave a giant hole.
Cook 3-5 minutes per side, or until your bread had reached the desired color!
I ate mine as a midnight snack with some WOW! gluten free chocolate chip cookies!
Haven’t gotten to use this yet, but figured I’d post if for those who may find it useful! :D
Thought this was interesting. I'm not much for gluten free baking just because I know how hard it can be to find the perfect flour substitue. Let me know if anybody tries this. I'd like your feedback!
Frito-Lay has recently released a list of all products that are gluten free, and also all products that do not contain wheat, but may be processed in a facility that contains wheat products.
It's quite a long list, and from what I looked at, all varieties of Cheetos are gluten free, which is awesome because we eat a lot of Cheetos in our house :)

Sauteed Pineapple
Ingredients
2 cups pineapple chunks
1.5 Tbsp brown sugar
1/2 Tbsp honey
1/2 tsp cinnamon
1/4 tsp cayenne pepper
1/2 Tbsp butter
Recipe
Cover pineapple chunks in brown sugar, let sit five minutes.
Melt butter in a saute pan until slightly bubbling.
Add pineapple and saute 5-7 minutes, or until pineapple is hot.
Drizzle with honey and spices.
Stir to coat all pieces.
Serve hot either with Teriyaki Chicken or over vanilla ice cream.
A picture of the pineapple can also be found under the Teriyaki Chicken link. It's very sweet and refreshing, and the cayenne just adds a little bit of kick. If you're not a fan of spicy food, you can always leave it out and it'll taste just as good!
Teriyaki Chicken
Ingredients
6 chicken breasts (I use three big ones and butterfly them)
1/2 bottle gluten free teriyaki sauce
1/4 c. pineapple juice
2 tsp. sesame oil
1 tsp. fresh ginger, grated
1-2 Tbsp. chili and garlic sauce (More if you like it spicy!)
Recipe
Combine all marinade ingredients in either a large bowl with a lid or a ziploc bag.
Coat chicken in marinade; let sit in refrigerator for at least 30 minutes. The longer the better.
Cook either on grill or in saute pan, 4-5 mins. per side, or until a meat thermometer reads at least 165F.
In a small saucepan, bring remaining marinade to a boil. Pour over the top of the chicken right before serving.
