Peanut Butter & Chocolate Cookies
These were the perfect amount of sweet. Just one cookie would stop any sugary cravings.
They were also quite easy to make, but maybe a little messy - as you're dealing with some sticky ingredients.
You also need a strong blender to chop up the dates and peanuts. And maybe some patience..
All in all, a good protein-filled snack that was enjoyed by all!
Ingredients for Cookies:
1 cup of peanuts
1/2 cup peanut butter
10 dates (pitted)
1 tablespoon of agave syrup (or honey)
1 tablespoon of coconut oil
Ingredients for Chocolate Sauce
3 tablespoon of coconut oil
3 tablespoon of cocoa powder
1 1/2 tablespoon of agave syrup (or honey)
Method
Place the peanuts in blender and process until coarse
Add peanut butter and blend together
Add dates, agave and coconut oil into the blender
Scoop out cookie shaped dough and chill for an hour in the fridge
Meanwhile, melt coconut oil and mix with cocoa powder and agave
Dip the cookies when chilled and enjoy!
