Day 8: dinner with friends. Baked acorn squash with wild rice, quinoa, black beans and a cheese sauce. Side of brussel sprouts with bacon and cornbread. Drinking New Belgium's Fat Tire.
Day 7: chicken salad with grapes, celery, jonagold apples, and poppy seeds. A side of cheesy brussel sprouts.
Day 6: baked spaghetti squash with zucchini, red pepper, onion and brussel sprouts in a red sauce I canned last summer. Topped with parmesan, cream cheese and parsley. A side of farmers pick grape juice that looks like wine.
Day 5: grilled cheese with red pepper and brussel sprouts and a side of tomato and parmesan dipping sauce with fresh parsley.
Day 4: beef barley soup with red peppers, onion, celery, parsnips, and nettles. Warm and hearty. Perfect for the 2-3 inches of snow we got today.
Day 3: homemade guacamole with onion, tomatoes, green onion, parsley and some spices. A side of Counter Culture Coffee pairs well on this snowy/rainy Saturday and is a great snack before heading out to dinner for my Husband's birthday!
Day 2: poached egg from our hens, whole wheat toast, shredded cheese topped with green onions and parsley. Side of sausage links and Guatemalan coffee.
Day 1: Zucchini pasta with an arugula and almond pesto, some shredded parmesan and tomatoes. Side of pork sausage meatballs rolled with bread crumbs and egg. Served with a French loaf. His beverage: Founders Mosaic Promise. Hers: champaign from NYE celebrations the night before.

It's almost the new year!
2015 is the year of minimalism. Alex and I are hoping to minimize the unneeded things in our home, whether it's outdated papers, clothes, knick knacks or books. We're storing it all in a room in our basement until our spring garage sale where everything must go! Along with this, we are also going to be investing in composting and intentional recycling. Leaving the smallest footprints as we can.
