It’s Monday morning and I get to do my favourite thing. Making chocolate. Today on the menu is some awesome Belizean cacao. I’m grinding the last of Mr. Florentino’s cacao beans and winnowing the next selection of Mr. Mateo Chub in Silver Creek, Belize. These beans are quite large, and gave such an amazing smell when I opened the bag.... Now this a lot of eggs.... the first large order have already gone to @sumawholefoods and @infinityfoodsbrighton But this is their re order. Say hi to Mr. Florentino from Belize. He grows about 1000 cacao trees naturally under the shade of fruit trees and cohune palm trees. The farm is tucked at the foothills of the Maya Mountain Reserve. I’ve got a small batch of his beans and that will go in production today.
