Paleo-friendly Chocolate Cookies
1/4 cup coconut oil (not melted), 1 egg, 1/2 cup coconut sugar, 2 tsp vanilla extract, 1/8 tsp almond extract.
Add & blend until smooth:
1/2 cup cassava flour (we like Otto’s), 1/8 cup unsweetened cocoa powder, 1 tsp baking powder, 1/8 tsp sea salt. (see below for options*)
Scoop out onto parchment lined pan, bake 10 minutes @ 350 degrees. Let sit on pan for 5 minutes, then transfer to cooling rack or just pop in your mouth.
These also freeze really well, line with parchment for an easy grab & go treat.
*Options: Stir in 1/2 cup chopped walnuts, top with with slivered almonds, sprinkle with coconut, sprinkle with pinch of xylitol, or add 1/2 cup Enjoy mini chocolate chips.

1/4 cup coconut oil (not melted), 1 egg, 1/2 cup coconut sugar, 1 tsp vanilla extract, 1 tsp lemon extract.
Add & blend until smooth:
1/2 cup cassava flour (we like Otto’s), 1/4 cup finely chopped pecans, 1 tsp baking powder, lemon zest, 1/8 tsp sea salt. (see below for options*)
Scoop out onto parchment lined pan, bake 10 minutes @ 350 degrees. Let sit on pan for 5 minutes, then transfer to cooling rack or just pop in your mouth.
