The legend doll I made is actually the first doll and I sewed it by hand, so I can't give you proper guidelines. But I can tell you about my process so that it hopefully will help you out with designing your own plushie.
The basics
In my experience you only need to know a few stitches:
the backstitch (no matter what stitch I decide to use, I always start with a backstitch because its very sturdy and much more reliable than a simple knot)
the running stitch (mostly used when testing things out and sewing the hair pieces to the head)
the ladder stitch (used to sew clothes together and to sew the head and limbs to the body)
the whip stitch (used to sew different layers of hair together)
For the head and body I used a pattern made by mimibitscoolcraft on youtube. You can buy the pattern on their kofi, but it probably possible to trace the pattern from their youtube video. The hair, the eyes and the clothes I designed myself.
Make sure to use something soft as fabric for the head, body and hair. I've seen people recommend minky fabric online, but I personally just walked into the local fabric store and got recommended a fabric that I cannot remember the name of for the life of me.
I used felt for the clothing and hat. At first I used a cheap hobby felt, but I'd recommend against it as it is prone to fraying and losing shape. Wool felt is the best. I switched over to wool felt for the upgraded fit I made for him (pictures at the end of post).
Of course you can use whatever fabric you want for the clothing, but felt is the easiest to use as a beginner. Just fold it the way you want it to look like and it will just stay put as you sew it together 10/10 would recommend.
I first started a draft on what I wanted my doll to look like:
It looks pretty scuffed, but it's important to sketch out the different hair pieces if you want to take a more 2D approach to the making the hair, like I did with legend.
Eyes
There are various ways to do the eyes. I choose to embroider them. Not on the doll fabric directly, but using a embroidery loop on a spare piece of cotton fabric I had. Use a marker to draw out the shape of the eyes and then embroider over it (any mistakes while drawing will be covered by the threads. Cut them from the fabric (with a margin of course! otherwise all your hard work will be for nothing!) when you're done, you have a DIY embroidery patch that you can sew directly onto your plushie's face. I did embroider the eyebrows and the mouth shape directly on his face, you can see the difference very clearly:
An (much much MUCH) easier way to do the eyes to cut the eye shape and the iris shape from felt and sew those together with a whip stitch, then sewing the eyes you just created to the doll.
Body
By following the pattern alone you will end up with something that looks like this little alien:
Sew the head and the arms to the body using a ladder stitch. (Make sure that you pull hard while doing a ladder stitch. You cannot have these stitches be too loose lest you risk your doll falling apart at the seams!)
Hair
When it comes to the hair I recommend you first use paper to try out different shapes. Sadly I lost the picture of legend's head pinned full with paper pieces but I do have one where the hair pieces are pinned on his head:
You don't have to stitch the whole hair piece on. To have a more voluminous effect you need to let some things be left alone. For this little piece of hair that sticks out I only sewed it to the head partially:
What also helps is using the scraps of fabric you no doubt have accumulation at this point in the process to give extra support to the hair:
I didn't feel like hiding this little stuffing, but there are definitely ways to do it more neatly then I did.
If you don't want your stitches to be seen (like I did with the hair pieces), you need to pay extra attention that you don't completely pull the needle through the fabric when sewing:
Tip: while sewing, don't be afraid to use your little buddy as pin cushion:
Clothing
Ngl, putting together the clothes took me the longest, this is because i am completely clueless on how to pattern draft and how fabric wraps around a 3D shape. This where the easy and stiff nature of felt was my saving grace.
Before you use your fabric of choice, it's probably safer to first try your pattern out using some cheap fabric or paper.
I ended up just estimating how big one clothing panel should be, cut those out, sewed one side together, turned it around, put it on the doll and then sewed the other side together with a ladder stitch. This is not a smart way to do things if you want to be able to do things if you want to be able to play dress up with your plushie.
Since the doll I made has such a huge head, I had to use a different way when I made the upgraded fit. Instead of sewing the other side together on the doll, I sewed press buttons on the other side, such that I can open and close them whenever I want to:

So after that one wonderful request I started taking some general notes on the possible Avatar AU, and I just can't stop thinking of earthbender Four, so he's the first one I decided to draw properly, 'cause he's just so badass I couldn't stop myself. Then I got this funny scene in mind and I really wanted to draw Warriors here
Some notes:
Four is one of two metalbenders in the Chain, but definitely the more skilled one
He wears a metal bracelet (like Toph in s3) in case he needs a small tool for something
The one above is his casual outfit (inspired by some outfits of United Republic citizens, metalbending officers and Toph of course). His travel outfit has more layers: an additional tunic underneath the main one, a hood and boots
He likes to throw tiny pebbles at others. Mainly at Wars. I don't know why
The element he struggled with the most was Water because I'm in a love-hate relationship with the Temple of Droplets because of its adaptive nature and his (originally) stubborn personality
I don't have much on Wars yet...
I do already have an element in mind for each of them though, and his native element is Fire
His uniform is a simplified version of the one that high-ranking United Forces officers wear in LOK + his scarf (blue looks really good with red hehe)
Uhh, any fics on The Chain thinking Legend was older than he actually is and finding out? Not an extremely young Legend but like the "Oh, we fucked that up a bit didn't we?" Kind of thing, also, thank you for your service :)
