Wether you are Keto, Paleo, Gluten free or just doing low carbs this is an amazing dish full of flavor. You won’t feel like your missing out on anything, especially the tortillas!
You can make this dish really cater to you and your family, don’t eat meat? Use tofu, or just add more veggies. You can use ground chicken, shredded chicken, ground beef, shredded beef.. the possibilities are endless. I used ground turkey for mine, I love the lightness and flavor it adds. These really are the best Keto enchiladas I have had so far! And it’s so easy to do.
You can do green sauce enchiladas, or red sauce, or even using a mole sauce! My go to is usually green chicken enchiladas, but my family prefers the red sauce. Sometimes I will even split the pan half/half so there is a little of each. (Yes, my family is spoiled!)
THE most important part of this dish is that you get all that water out of the zucchini so it doesn’t make soup in your dish. Todo this, all you have to do it slice the zucchini using a mandolin (watch your fingers) and lay them out on a few paper towels.
Then, you are going to sprinkle them with salt, don’t worry, this won’t make you enchiladas salty! As they sit, about 15-20 min you will see the water start to surface, flip them over and do the other side. After 20 more minutes. Wipe them off with paper towels and set aside. You will notice the texture change. The picture above is from start to finish.
You can do this to make tons of recipes with zucchini like lasagna, pasta, and really any kind of casserole you can think of. You can roll them and stuff them with ricotta, or chicken.. it really is so versatile.
You have options for your enchiladas, rolled up, or layered. See below for some ideas…
Okay, so now that you have picked out your filling, sauce, and style of enchilada picked out you are ready to get layering!
-Don’t forget about those zucchini strips you are sweating! We want a forkable enchilada!! Give em a little substance ya know!
Layer or roll like you would any enchilada or casserole. Adding shredded cheese, protein of choice and smothered with sauce at every layer, top with extra sauce and CHEESE!!
Bake at 350, covered for 25 min. Uncover and bake for 10 more. I usually throw the broiler on for the last 5 min so it gets that added color and cheese crunch.
Make sure you watch out for the carbs in the canned enchilada sauces. If you are bold enough to make your own, here is how I make my green enchilada sauce from scratch:
–Fire flash about a dozen green chillies, or sometimes they sell them roasted (even easier).
–Pull the tops off, I leave the seeds in for a kick but you can easily split them open and remove them.
–Blend with onion (which I also roast for added flavor), red or green bell pepper, jalapeños to your splice level, cilantro… 1tbs of each marjoram, oregano, tomato paste, cumin, garlic cloves, paprika, and then salt and pepper to taste, adding a few tablespoons of water or stock if needed.
-After blending, sauté in a pan for about 15 min

Grilling season is good for so much more than burgers and chicken breasts. Your grill is a gateway to a world of healthy eating possibilities! Perfect for a hungry crowd, this refreshing and satisfying summer salad stars fire grilled shrimp and charred corn for a smokey-sweet combo you’ll crave again and again.
Prep Time: 20 minutes • Total time: 30 minutes • Makes 4 servings
• 1 lb raw shrimp, peeled (about 16-20) • 2 Tbsp olive oil • 3 ears of corn, blanched • 1 large avocado • 1 cup cherry tomatoes, halved • 3 Tbsp sunflower seeds • 1 cup cilantro • 1 cup black olives • 1 cup shredded Mexican cheese
Cilantro Lime-Dressing • 1 avocado, halved and pit removed • 1 jalepeno • ¼ cup cilantro • 3 Tbsp lime juice • ¼ cup sour cream • ¼ tsp salt & pepper • 1 Tbsp olive oil
Shrimp marinade
1 Tbsp olive oil
2 Tbsp lime juice
1 tsp chili powder
1 tsp red chili flakes
1-2 tsp Tabasco
Marinade the Shrimp for 10-30 min prior to grilling.
Quick Tip: Make the dressing in advance and store in the refrigerator until needed.
1. Heat grill to medium. Slice avocado into ¼-inch thick slices and brush slices with olive oil.
2. Place shrimp on grill and cook until white of shrimp is opaque, about 1-2 minutes per side.
3.Place avocado on grill and cook for 30 seconds per side.
4. Place corn on grill and rotate every 1-2 minutes until bright yellow and charred on all sides. Remove corn from heat and slice off the cob.
5. Make the dressing by combining all ingredients in a food processor. Pulse until blended. Add olive oil and pulse. Add water if needed, tablespoon by tablespoon until mixture is thin enough to drizzle.
6. On a platter, combine corn, cherry tomatoes, black olives, cilantro, sunflower seeds, and cheese. Top with grilled shrimp and avocado. Drizzle dressing over salad and serve immediately.

It’s easy to host your own paint night at home. Reading through our step-by-step directions and completing a copy of your chosen painting ahead of time is all the training you’ll need to lead your guests through the painting process. Add food and drinks, and your friends will be sure to have a memorable time!
All you need is inspiration to get started. I searched YouTube for Paint at home tutorials and there are 100’s to choose from. Make sure you take lots of pictures of the all the fun, so you can come back and share with us.
PARTY PLANNING SCHEDULE
Use our handy party planning checklist to help make sure that your party runs smoothly so you can enjoy yourself as much as possible.
3-4 weeks before:
Set a date for the party and send invitations. Ask for R.S.V.P.s so you know how many supplies you’ll need to purchase.
Choose the canvas design that you and your guests will paint.
Shop for all your painting supplies. Don’t forget to go online and download any coupons to stack the savings.
1 week before:
Plan your menu. Keep it simple by including make-ahead dishes or finger foods and make large batches of cocktails or serve bottles of wine for beverages. You can even do lemonade or sparking fruit juice for a kid’s birthday party or special non-adult only party.
Order any specially themed decorations you want such as plates, napkins, tablecloths, and banners.
Come up with a music playlist, coordinating the music with the theme of the party if possible. Make sure you play it at a level that doesn’t hinder conversation once the festivities get rolling.
Give the house a good cleaning!
2-3 days before:
Create a detailed shopping list for food and drinks.
Arrange furniture so that each guest has enough room for his or her easel and supplies.
Check your lighting. Make sure guests will be able to see to paint and blend colors properly.
Cover floors with drop cloths so you don’t have to worry about paint spills if needed. Or choose a space in the house that is tiled for easy mopping.
The day before:
Shop for food and beverages. Don’t forget the ice!
Buy flowers to help decorate.
Do as much prep cooking as possible.
Do cleaning touch-ups as needed.
Set out the painting supplies.
1 hour before:
Empty the dishwasher so it’s ready to fill quickly and easily with dirty dishes from the party.
Change into your party clothes.
Lower the thermostat so guests stay comfortable after everyone arrives.
30 minutes before:
Review the painting steps.
Light candles and turn on the music.
Pour a glass of wine!
