Paleo Coffee Egg Latte
Ingredients:
• 1 cup coffee
• 2 eggs
• 1/2 tbsp maple syrup, honey or agave
• 1 tsp cinnamon, vanilla or cocoa powder (optional)
Directions:
1. Brew coffee (works well with nespresso coffee makers too)
2. Add eggs and sweetener to a blender (immersion blender or magic bullet) and blend until frothy
3. Add 1/4 – 1/2 cup of coffee slowly to the egg mixture and stir to temper the eggs (This is VERY important! Tempering the eggs keeps them from cooking)
4. Add remaining coffee and blend again until desired frothiness (totally a word)
Everyone I have mentioned this to is grossed out. I swear it is delicious. It admirably fills the hole left by regular lattes, cappuccinos or coffee with cream.
There is also fear of eating raw eggs - I've eaten many raw eggs and never gotten sick from them. But it is a risk so be aware.
