I was stupid over #MagicShell chocolate sauce when I was a kid.
I didn’t even care about the ice cream underneath it’s crunchy, chocolaty coating. I loved seeing how it froze and adapted to the space it landed in. It was truly magical to me. Sadly, like most magic, upon closer inspection…..disappointment is inevitable. I’m sure it’s no surprise that Magic Shell is filled with fake ingredients, chemicals, tons of processing and LOADS of sugar.
So the day I realized I could recreate it without hating myself or feeling like I needed to give up on life or a waistline was one of the happiest of my life. Not only are these treats guilt free, but actually healthy! Bananas contain several essential nutrients and provide benefits for digestion, heart health and weight loss. Coconut oil is high in healthy saturated fats that have different effects than most other fats in your diet. These fats can boost fat burning and provide your body and brain with quick energy. And ShakeOlolgy contain a blend of proteins including whey and pea protein along with vitamins, herbs, antioxidants, probiotics and digestive enzymes.
These chocolate covered frozen bananas are like summer on a stick.
INGREDIENTS
2 ripe but firm bananas
1/2 scoop Chocolate protein powder. (I used Shakeology)
3 tablespoons Coconut oil
1/2 cup granola, chopped pecans and walnuts, or sprinkles (optional)
PREPARATION
Cover a plate with parchment paper.
Cut the bananas in half and insert a Popsicle stick or a fun colored paper straw into each half, as shown. Place them on the covered plate and freeze for 15 minutes.
Meanwhile, melt the coconut oil in a Pyrex measuring cup in the microwave (less than 30 seconds). Stir in protein powder and mix until smooth.
Cover each banana half in the chocolate, then quickly sprinkle with your topping (if using).
Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week.
Spoiler alert: This would work with ANY fruit you wanted Apples, Strawberries, Blueberries….
