These mini meatloaf muffins are a fun twist on a classic comfort food. They're perfect for kids and adults alike, and they cook up quickly in a muffin tin for easy portioning and serving.
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup ketchup. 1/4 cup finely chopped onion. 1/4 cup finely chopped bell pepper. 1 egg, beaten. 1/2 tsp garlic powder. 1/2 tsp salt. 1/4 tsp black pepper.
Instructions: Warm the oven up to 190C 375F. Take a big bowl and mix together the ground beef, breadcrumbs, ketchup, onion, bell pepper, egg, garlic powder, salt, and black pepper. Make sure everything is well mixed. Spread the mix out evenly in a muffin tin that has been greased, and then gently press each one down to make mini meatloaves. Put them in the oven for 20 to 25 minutes, or until they're done and the tops are browned. Let it cool down for a while before you serve it. Have fun!

With the addition of bacon's smoky flavor, these mini meatloaf muffins are wrapped in bacon. They make a delicious, cozy dinner and are ideal for individual servings.
Ingredients: 1 lb ground beef. 1/2 lb ground pork. 1/2 cup breadcrumbs. 1/4 cup milk. 1/4 cup diced onion. 1/4 cup diced bell pepper. 1/4 cup diced celery. 1/4 cup diced carrot. 1/4 cup ketchup. 1/4 cup Worcestershire sauce. 1/4 cup grated Parmesan cheese. 1 egg. Salt and pepper to taste. 12 slices of bacon.
Instructions: Set the oven temperature to 375F 190C. Ground beef, ground pork, breadcrumbs, milk, chopped celery, diced carrot, diced onion, diced bell pepper, ketchup, Worcestershire sauce, grated Parmesan cheese, egg, salt, and pepper should all be combined in a big bowl. Blend until thoroughly blended. Apply cooking spray or oil to a muffin pan to grease it. Evenly divide the meat mixture among the muffin cups, packing it firmly to ensure that there are no pockets of air. Tuck the ends under as you wrap a slice of bacon around each meatloaf muffin. Bake for 25 to 30 minutes in a preheated oven, or until the meatloaf muffins are cooked through and the bacon is crispy. Before serving, take them out of the oven and allow them to cool for a few minutes. Savor your mouthwatering meatloaf muffins wrapped in bacon!
