Grilled Dodo
As Iâve mentioned in other recipes, I live in a small apartment (on the top floor no less) â I wish I owned a lovely charcoal grill, or a big outdoor meat smoker, but I donât (yet.) I decided to invest in a heavy cast iron grill pan, which produces a similar sear to a grill, though itâs harder to get those gorgeous grill lines on a stovetop pan.
Any grill pan or frying pan will do for searing chicken, so long as itâs made out of a substance that can get good and ripping hot and keep its heat. Cast iron is the best. If you would prefer to make this on a real charcoal or gas grill, by all means go ahead!Â
This is one of the simpler recipes in the cookbook, being mainly âcook the chicken until itâs done.â But hey, itâs tasty, quick, and it looks good! I poured the schmaltz from the grill pan into a frying pan and cooked some zucchini squash in it, then whipped up a quick honey mustard sauce to go with it (Dijon mustard, honey, mayonnaise, and a squeeze of lemon juice, stirred together, makes an amazing last-minute sauce for chicken.) Grilled Dodo turned out to be a great low-effort dinner.Â
Grilled Dodo!
1 or more chicken breasts (size up as desired!)
Vegetable or canola oil
Garlic powder, salt, and pepperÂ
Half a lemonÂ
Pat each chicken breast dry with a paper towel and season each breast with salt, pepper, and a liberal dose of garlic powder. Pour oil into your grill pan (a couple of teaspoons for a 10-inch pan is good.) Let the oil heat up over medium-high heat until it shimmers, then place a chicken breast or two in the pan (depending on how big the pan and breasts are.) It will hiss and sizzle at you â thatâs good! Donât disturb it for 3ish minutes, then try to lift it from the pan with a spatula. If it sticks, give it more time; otherwise, rotate the chicken breast 90 degrees and cook for 3ish more minutes. (The 90 degree turn is what creates that beautiful cross-hatch pattern, if your pan allows for it.) Flip the chicken breast and do the same process on the other side. Your chicken breast, depending on thickness, might be done now or it might need a little more time. When the internal temperature reaches 160-165 degrees, remove the breast from the pan and set it aside to rest for several minutes. Repeat until youâve cooked all of your chicken, then drizzle the breasts with fresh lemon juice and serve!Â
Ishgardian Tea
âRather than adding milk to boiling water that has been infused with tea leaves, as is the fashion in lower Eorzea, Ishgardian tea is brewed by boiling yak milk and letting dried Coerthan tea leaves steep right into the hot liquid.â This one feels almost too easy, but Iâm glad that I got to try making tea this way â Iâd never had milk tea before!Â
I usually take my tea black and hot, but the milk in this tea makes it a luxurious, creamy treat. Channeling my inner Picard, I used loose-leaf Earl Grey tea and sweetened it with maple sugar as per the recipe. The hint of maple was really tasty with the citrus notes of the Earl Grey.
You can make this with just about any kind of tea and just about any kind of sweetener. (I bet this would be tasty with honey.) Black tea probably works best, since milk is more flavorful than water and youâll need a stronger-flavored tea to match it. My recipe below makes enough for two mugs of milk tea, but itâs pretty easy to size up or down â fill a mug with milk, then pour that amount into your saucepan once per cup you want to make. And use 1 heaping teaspoon of loose leaf tea per cup you want to make.Â

2 heaping teaspoons of loose leaf Earl Grey (or any strong tea of your choice) tea leavesÂ

Add your scoops of tea and steep according to the type of tea you chose, stirring occasionally to stop the milk from forming a skin; different teas have different steeping times. I steeped my Earl Grey in the hot milk for about five minutes. Strain the leaves out of the tea and pour into mugs or teacups, then sweeten to taste. A perfect rainy-day cup of comfort!Â

PSA: 10 things customers should learn about sales associates
1. When there is a long line, be patient. They are trying their best they can to ring you up as quick as possible. Complaining or asking for another register does not help. It only increases the stress or anxiety for the cashier. 2. If a store is disorganized or a mess, please keep your negative comments to yourself. I guarantee you, they are recovering and trying to keep the store clean as fast as possible. 3. If you decide that you donât want an item anymore, give it to the nearest sales associate. Please do not just leave it lying around anywhere. This increases the mess. 4. If your son or daughter is wearing a hat or sunglasses or an item that they sell in the store and a sales associate asks if it belongs to the kid, do not just assume that they think you are stealing. It is their job to ask. Most often kids will put them on to play in the store and forget that theyâre wearing it. Or the parent wonât notice. There is no reason to overreact. Itâs part of their job to ask. 5. Before returning an item, call or talk to an associate about the return policy. Ex. There are certain stores that donât accept returns without a receipt. If there is nothing the associate can do, do not get mad at them. Itâs store policy. They can get fired if they try to make an exception. 6. If a sales associate says they are closing in five minutes, donât continue to shop after they close. There are closing routines that they still need to do and they just want to finish and go home. 7. If the store is already closed, please do not bang on the doors. This will not help. The registers have already been counted and the deposits are done. Even if they wanted to open the doors for you, they can not. 8. When you canât find an item you want out in the floor, donât assume that there is more in the back. Most retailers (like small stores in the malls) have to take out everything from the stock room because their goal is to sell as much merchandise as possible. 9. If a sales associate is already helping someone, even if you are in a hurry, please wait your turn. Do not just interrupt them. It is rude and the customer that they are helping can get mad. 10. If a sales associate looks mad, do not think they are giving you attitude, or making faces at you. They could be having a bad day, but most often, it could just be that their face looks like that.
I'd say definitely ask if there is some in the back, especially during delivery days. We can only move the wares out so fast, some wares might be in the back all day.
