Stuffed Chicken Parm
I made this tonight for myself and Dad. It's a recipe I cobbled together from my typical Chicken Parm and a recipe I found on Cooks.com.
(Makes 6 good sized chicken breasts)
Stuffing
2/3 cup Ricotta
1 pkg. frozen, chopped Spinach (thawed, drained and patted dry)
1 tbsp Parmesan cheese
Breading
1/2 cup Parmesan cheese
1/2 cup bread crumbs
1 tbsp Oregano
1 tsp Paprika
salt and pepper to taste
butter (at least one stick, keep a second handy)
Preparation
Mix stuffing ingredients together in a small mixing bowl
Cut along the thickest part of the chicken breasts to create a pocket.
Fill with stuffing
Melt the butter in a container large enough to hold a chicken breast.
Mix the Breading ingredients and place in a large, shallow container
Dip each chicken breast in the butter and transfer immediately to the breading.
Coat thoroughly with breading and place in a large baking dish, leaving space around each piece.
Bake at 400 degrees F for 35 minutes or until internal temperature reaches 180 degrees F.
Serve with tomato sauce.
