Confession. I botched the Brussel sprouts big time. They looked all legit but inside they are anything but tender. It's partly because I have a new girl and partly because I just didn't care to stand out side as the sun went down and the nosey next door neighbor just can't stop peaking over the fence. This entire dish ended up in the oven to finish-off. All was well but the efforts to neighbor-proof the backyard and still not up to snuff.

Eddy's Beef Jerky - Local Awesomeness.
You know what's awesome? Finding someone who is hell-bent on pleasing the customer and willing to go the extra mile to make things right. Those of you who know me well know that I'm pretty Paleo these days and when it comes to finding simple things like Beef Jerky from grass-fed/grass-finished beef jerky to toss in a hiking bag or the kids lunches for snacks, you're S.O.L. There are a few brands that come close but they also charge ridiculous prices for pathetically small portions. So, back to the "what's awesome" part… Eddy's Beef Jerky is awesome! I found Eddy from a search on http://www.eatwild.com/products/colorado.html where I've been scouting http://www.5280beef.com/5280beef.htm for a while now (let me know if your interested in a cow-share btw) and when I went to Eddy and said "So close man, but I'm just not feeling soy" he responded by offering to make a special batch that met all of my high maintenance needs – no gluten, no soy, grass-fed/grass-finished (all of Eddy's beef is GF/GF from 5280), ingredients I recognize – AKA un F'd with beef jerky. To be clear I am paying for one jar of Eddy's Beef Jerky at $20 or so and he's making me a special batch. That is awesome! Clearly if it's as good as I think it's going to be I'll be a long-term buyer but what business is going to go out of their way and modify there recipes to please some high maintenance foodie for $20? Evidently Eddy is and for that he gets a Friday afternoon rant praising his awesomeness.

I learned to cook at a young age as the youngest of a single mother. I spent many nights fending for myself and sharpening both my knife skills and my first aide skills. So when my son started to show a genuine interest in cooking and not just eating I didn't hesitate to get him started with some knife practice. Mind you, I didn't shove my 8"in clever into his little hands but I didn't start him off with a wee little butter knife either. With proper supervision an instruction a six year old can not only manage a cooking knife but learn to use it effectively and being the life long journey of culinary happiness. Knowing how to cool has made me fat, made me thin and landed me a hottie of a wife with a thing for good food. Here in the states we are pretty frantic about rubberizing playgrounds and protecting our kids –– which is great. But we've got to let the kids bang their knees and nick their fingers at some point too. They are much more capable than we know. I'd suggest letting the kids chop the scraps from vegetables into the tiniest pieces they can. It's great practice and helps to speed the compost pile up quite a bit. As 38 Special so elegantly stated "hold on loosely, but don't let go…"

Kale is amazing! Doesn't matter if your a health nut who loves the pound-for-pound nutrition kale offers or a fooding who loves the balancing power of kale in meat dishes, soups and salads. Best of all, I grow this year round in a 5 gallon RubberMaid™ container with the help of a $200 bank of T5 lights. Just clip what you need and keep the container full of nutrient water and you've got the freshest greens possible at your fingertips.

Short version. I went Paleo and gave up the rice. But secretly I was really missing it. There were a few nights that I almost made a basmati-call (that's a rice booty call) but I stuck to my guns. Then, I discovered the magical powers of the humble cauliflower. EPIC! Seriously, if all you ever did was make cauliflower rice it would be worth it's weight in Kerrygold (Paleo gold/currency) but it also makes a great hummus, pizza curst and of course, steamed vegetable.

In short: eggs from heathy birds are healthy for humans. Yolks have the nutrients and cholesterol in food is not the same as cholesterol in your body. Eat your eggs folks!

I wasn't even looking to grab some basil but it grows so damn fast in hydro and mine is at the point of flowering under my T5 lights. So I spend a lot of time pinching buds and keeping the plant from wasting energy on flowers. I do wish it was my spicy Italian basil, but this lemon basil will do until it the Italian catches up.

It used to be that the BLT was my favorite sandwich. Now, it's my favorite pinch-which. WTF is that you ask? It's a sandwich without the bread. You pinch the ingredients between your thumb and finger while shoving it into your salivating mouth. Gluten Free and mighty tasty. Bonus points include: Gluten Free, pasture raised pork w/o Nitrates hydroponic Escarole Endive lettuce form my hydro farm in the basement.

Why all of the "free" in this pizza pie. The shorthand is that Gluten is bad for you and dairy is bad for my wife. But don't let all of that free make you think this isn't an awesome pizza pie. The crust is a good 3/4 deep with meat, spinach onions and goat cheese topping it off. It's one of those "I'm so full" meals :)
