Keto Broccoli Bites - 43 kcal/2.9g protein
Servings: 30 bites - 43 kcal/2.9g protein per bite
3 cups lightly steamed and chopped broccoli
1 oz cream cheese, softened
1 1/2 cup cheddar
1/2 cup parmesan
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
2 tablespoons coconut flour
1 teaspoon baking powder
1. Preheat oven to 400 degrees F.
2. Steam the broccoli, chop lightly and remove the tough stems.
3. In a medium-size mixing bowl combine the cream cheese, cheese, spices and eggs. Stir in the broccoli.
4. Fold in the flour and baking powder.
5. Chill dough 10-15 minutes to allow the flour to absorb the moisture, DO NOT SKIP THIS STEP.
6. Spoon into a silicone mini muffin pan.
7. Bake 12-15 minutes.
Tasty tofu loaf with side salad
Recipe for two servings. Approx. 250 calories per serving.
1 onion, diced
1 tbsp of oil
250g tofu
Half a cup of oats/bread crumbs
1 tbsp of tomato ketchup
1 tbsp dijon mustard
2 tbsp soya sauce
2 tbsp seeds (sunflower, sesame, pumpkin)
1 tsp dried thyme or rosemary
Salt and pepper
Optional: fresh parsley
1. Preheat the oven at 200 degrees Celsius.
2. Grease either a 400g loaf tin or small Pyrex dish.
3. Fry the onion in oil until soft.
4. Blend all other ingredients except for breadcrumbs/oats using either a hand blender or food processor. Add a little soya milk or water to loosen the mixture if necessary.Ā
5. Add fried onions andĀ breadcrumbs/oats to the mixture, and pour into the tin or dish.
6. Bake for 1 hour, or until the loaf browns on top.
7. Slice and serve with a fresh green salad.Ā
TOP TIPĀ Replace herbs and mustard seasoning with any of your choice. For example: sun dried tomatoes, olives and fresh basil. Yum!

This dish usually has corn, cheese, sour cream, and meat. Though at my favorite Columbian restaurant this is how I use to order it since this makes it vegan and it also has less calories this way
Steps:
Cilantro sauce is simply to make you'll need a blender. In the blender you'll add a batch cilantro squeeze half a lemon and lime to blender with salt, pepper, and garlic (minced or seasoning). If it is to thick then add a little bit of water if it's to thin add a more cilantro. The consistency doesn't have to be perfect as long as it takes good.
Warm up the beans and the cauliflower rice and crush up either the crackers or potato chips
Layering is key its what makes it takes so good. Put beans, "rice", crushed up crackers or chips, cilantro sauce, and hot sauce.
My favorite Columbian restaurant closed because of covid and I was seriously craving this last week so I decided to recreate it which definitely has way less calories

Ingredients:
Tomato sauce 25 cal
Vegan ground beef 80 cal
Frozen bell pepper blend 20 cal

On a pan warm up and spray nonstick spray and the frozen veggies together and "ground beef" stir around until it's no longer frozen add tomato sauce and seasoning (nutritional yeast) and stir around until everything is cooked through

275 Calories for 2 stuffed bell peppers
Ingredients
2 half bell peppers 60 cal
Pasta sauce 90 cal (I had leftover sauce you can always use tomato sauce)
Broccoli cauliflower rice 35 cal pouch
Cashew queso 30 cal *can always use extra cheese or nutritional yeast
1 slice vegan cheese 60 cal
Hot sauce (tapito) 0 cal
Instructions SUPER EASY!!!
Pre-heat the oven
On a pan warm up the cauliflower rice add the pasta sauce and then queso
Stir the cauliflower till the sauce is combined add hotsauce if you'd like or any seasoning to your liking
Once you like your cauliflower rice you can place in the bell pepper you can use 1 bell pepper and cut in half and use both halfs (these were leftovers so i had 2 halfs) also make sure you take out the seeds and stem
Once you place the cauliflower rice in the bell peppers you can add your cheese i use 1 slice and just place them on both
Put in the oven until the cheese melts about 5-10 minutes
Enjoy! Very low cal and filling

IMPORTANT PSA: SUPER LOW CAL PEANUT BUTTER
Hi, I just figured out how to make peanut butter that is only 35~ calories for a serving (a serving of peanut butter is 2 tablespoons), sugar free, and it tastes really good! A normal serving of peanut butter is 180 calories, for comparison.
I didnāt think it would work.
Buy peanut butter powder at the store, usually itās around the baking aisle. It should be around 50 calories per 2 tablespoons.
Buy almond/coconut milk or whatever kind you use. Mine is 30 calories per cup.
Buy a bottle of zero calorie sugar free maple syrup, it exists and it tastes pretty good. Although this is optional, I just think it helps. Itās a great sweetener in general for when I get sick of the taste of stevia.
The ratio is about 2 tablespoons to 1.5 tablespoons of almond milk, and a dollop of the syrup. I just did that until I filled a jar, and then mixed it all together with a little mixing knife and it came out just like normal peanut butter. Donāt add too much milk/syrup right away, just go as needed to get the consistency you need. In the end since the powder is dilluted by the almond milk (which is like less than 2 calories per tablespoon, you get about 3-4 tablespoons of peanut butter per 2 tablespoons of powder. Meaning your total calorie count per tablespoon is about 13-17 give or take.
If you get a major craving, just a spoonful of this will really help.

~ Choco Mug Cake Recipe ~

What you need:
~ 1 Tbsp flour
~ ½ Tbsp sweetener
~ ½ tsp baking powder
~ ½ tsp cacao
~ 1 tbsp light soy milk
How to:
1. Mix everything together and place the mug in the microwave for 1 and a half minutes.
Tip: You can also add berries, cinnamon, vanilla extract, applesauce or banana if you like.

Vegan taco night is the best. Seriously.
Recipe for like 8-10 tacos (with leftover lentils):
1 cup dried black lentils, sorted and rinsed (you can also use lentils du puy/French green lentils, but I prefer the texture of the black lentils)
2 cups veggie broth
¼ minced onion
2 cloves garlic, minced
several dashes each of cumin, coriander, chili powder, and ancho powder
dash of hot sauce
SautƩ onions for a few min, then add garlic. SautƩ another min, then add the rest of the ingredients. Bring to a boil, turn down heat, cover and simmer ~30 minutes until lentils are tender. Feel free to add whatever flavors you like (this time I added some chopped cilantro and diced jalapeƱo.)
When tender, drain if necessary (I didnāt). Taste and season with salt and pepper, and add a dash of lime juice (this is key, the acidity adds so much flavor)! Heat some tortillas, then top with whatever toppings you like. I used some vegan cheese (VioLife Cheddar), vegan sour cream (Tofutti), medium salsa, more finely minced onion, a little fresh hot pico with lots of jalapeƱo from my bodega, and additional hot sauce.
Iāve still got like 1-1.5 cups of the lentil mixture leftover, which Iām stoked for because itās delicious on its own.
