Green had decided to make a Butterscotch Cinnamon Pie for their friends!

They grab flour, butter, water, salt, ground cinnamon, milk, cornstarch, heavy cream, light brown sugar, eggs, vanilla extract, a 9 inch pie pan, small pot, useable oven, stove, and pie weights (dry beans also work).

First Green makes the crust. They preheat their oven to 375F (190C, 464K or 835R) then mix 1 1/4 cups of flour to a tsp of salt, before adding 1/2 cups of (preferably room temperature) butter. After that they add a little bit of ice water until the crust can hold its shape. Next they roll it flat and (opt rub butter into the pie pan to make it nonstick) and then line the pie pan with the crust. Then they put pie weights (if you don’t have those then you can use dry beans) and put it in the oven for 20-25 minutes, before taking it out, removing the pie weights and putting the crust back in for 5-10 more minutes.

Next Green starts to make the filing. They grab a small pot and mix 3/4 cups of heavy cream, 1 1/4 cups of milk, 2/3 cups of light brown sugar, 1/3 cups of cornstarch, 1/2 teaspoons of salt, and 1/2 teaspoons of cinnamon, on medium heat until the mixture becomes a pudding-like consistency. Once it hits to point where it starts to thicken then it will go fast, so pay attention to it! Then they grab 3 eggs, remove the egg whites and mix, before they pour tiny portions of the egg yolks into the mixture on the stove. This is called tempering. Once the mixture gets really really thick remove it from heat and add 1 teaspoon of butter and 1 teaspoon of vanilla extract, mix until the butter is fully incorporated.

Green lastly grabs the crust from earlier and pours the mixture in, smooths it out, and lets it rest for 30 minutes before moving into the fridge for at least 6 hours.

After all that waiting Green now has ButtsPie to give to their friends!
