Pan de coco or "Bread of Coco (coconut)"/"Coco bread" is a Filipino soft bread stuffed with coconut meat custard. Best consumed every merienda but can also be a breakfast bread along w/ a hot coffee. The incorporation of coconut meat to the bread is said to have been influenced by the Spanish from their South American colonies. Though, unlike the caribbean counterparts, the Filipino version of the bread uses the coconut as stuffing instead of mixing it to the dough. ​A sour base soup, "Sinigang", is the dish that contest "Adobo" as to what can be the Filipino's National Food. Sinigang basically is the process of cooking a meat or seafood with tamarind to make a sour soup. Vegetables such as tomato, taro, string beans, okra, and finger chilies are then added. Other variations of this dish include miso & ginger especially on fish or seafood. Traditionally, tamarind is the main ingredient to make the soup sour. But, other ingredient such as "calamansi", Guava, and unripe mango can be used as a substitute. Most of the ingredients of sinigang are cultivated around the country. Thus, some believed that sinigang is a dish natively from the Philippines. Another comfort food during rainy days is the "Tinola". This dish is made by sauteéing the ginger, garlic, onion, and crushed lemongrass stalk w/ the chicken then water is added to boil. Vegetables such as "sayote" (chayote), or young green "Papaya", and chili leaves are then added to finish. Tinola was also famous during the Philippine Revolution. A good relief for soldiers that are exhausted, hungry & tired from the battle. The origin of tinola is unknown. Though, in my opinion, tinola was invented during the pre hispanic era.
