Blueberry Chia Pudding
Super tasty breakfast, also makes a great dessert.
BLUEBERRY CHIA PUDDING INGREDIENTS: 2 tbsp chia seeds ¾ cup water 1/3 cup cashews soaked overnight, drained and rinsed (or for 15 minutes in hot water) 2 fresh Medjool dates, pitted pinch of cinnamon pinch of salt ¼ cup fresh or frozen blueberries
DIRECTIONS: Soak chia seeds in the water for about 15 minutes, stirring occasionally to prevent lumps.
Combine chia pudding with the remaining ingredients in a blender and blend on high until smooth.
Serve with blueberries and enjoy!
Makes 1 serving – 463 calories, 9g protein, 60g carbs (9g fibre), 25g fat
NOTES: For a sweeter pudding (great for dessert), use 3 dates. Each additional date will add 66 additional calories to the batch total. You can also use dried dates; just soak them overnight to rehydrate them and you’re good to go!
